I visited Ramen Taisho at Hillview and ordered the Sambal Tsukemen ($8.80) with an add-on of Extra Noodles ($1.50) and a Cream Duck Shit Oolong Tea ($3.80). The Good: The Noodles: Absolutely fantastic. They were cooked just right—perfectly al dente with a great springy texture. The Tea: The Cream Duck Shit Oolong was excellent. It wasn't diluted at all; the tea was robust, and the cheese cream foam had that lovely savoury-sweet balance. The Portion: The noodle serving is incredibly generous. I added extra noodles, but honestly, the standard portion would have been enough. If I had known, I wouldn't have added the extra portion—it was huge and very carb-heavy! The "Can Be Better": The Protein: This is the main reason for my 4-star rating. For the price, the protein is quite lacking. I received only one large, thinly sliced piece of pork. I expected at least 1 or 2 more pieces to balance out the meal. The Broth: While the flavour was good (though there wasn't really a Sambal kick, flavours were sufficient), the consistency was a bit thin for a Tsukemen broth. I personally prefer it thicker so it clings to the noodles better. Verdict: Great noodles and drinks, but they need to be more generous with the meat to make it a balanced meal.

we went for their signature Shio Ramen & Black Garlic Ramen, while another friend tried out their Salted Egg Dipping Ramen. The soup base is so milky and smooth. Besides the silky smooth soup base, Shio Ramen's pork broth is well balanced with the milky fragrant taste; Black Garlic ramen is a must for garlic lovers yet won't be overwhelming. Personally think to pour over the salted Egg sauce rather than dipping, otherwise will be towards the salty end taste. Noodle doneness are well cooked, soup base ramen is think and not soggy, and the dipping ramen is more thick and springy. The Matcha Latte is so well balanced, matcha not astringent and milk is silky smooth (make us order a strawberry matcha after meal and it's GOOD!). P.S.: The pudding is so milky which surprises us at the first bite! If you're not driving, the location is accessible via link bridge from Cashew Station (DT Line)!

I had a very disappointing experience with the service at this stall. I stood in front of the counter for several minutes while two staff members were inside the shop resting. I had no issue with them taking a break, but when I tried to get their attention to place an order, I was ignored multiple times. Only after several attempts did the cashier tell me that the stall was closed. This meant I was left waiting unnecessarily, even though one of the staff members inside clearly saw me and could have informed me earlier. This isn’t an isolated incident. On normal days, the staff often appear unfriendly, and I’ve been met with glares multiple times while ordering, as though my presence is an inconvenience. It genuinely feels like customers are not welcome. The ramen that they sell is really good, which makes this even more disappointing. Unfortunately, poor service completely spoils the experience. It’s a pity that a stall with such good food is let down by its atrocious service standards. With better training and basic courtesy, this could easily be a place I’d return to — but for now, I won’t. TLDR: The food is good, but the service is so bad that I won't return.

This could be one of the best ramen spots in Singapore for under $10. The tonkotsu ramen uses firm, chewy Kyushu-style noodles with a rich and flavorful broth. If you're a fan of Ichiran-style ramen, you'll probably enjoy this. The tsukemen reminds me of Taishoken (大勝軒). The portion is very generous, and I was already full without ordering extra noodles. One small suggestion for the tsukemen: since Timber+ is an air-conditioned food court, the dipping broth cools down quite quickly. It would be even better if the soup was served a little hotter so it stays warm throughout the meal. That's something I noticed many tsukemen shops in Japan do really well, and I think it would make the overall experience even better.

The salt egg tsukemen is probably among the worse tsukemens I have eaten. The strange fusion of salt egg and what i think is fish puts me off.Is the sauce suppose to be watery too?
