We love the ratio of the fluffy eggs mixed with the starchy batter. The fragrance and bright orange colour were good telltale signs that the stall uses good quality eggs. The chewy texture is nicely balanced out with the slightly crispy exterior. The tangy and spicy chilli sauce was impressive too. The uncle generously gave us two overflowing sauce dishes of it despite we ordered the smallest portion. Oh and not forgetting the star of the dish - the plump and glistening oysters! As satisfying as the dish was, the price is on the higher side because the stall is located at a touristy spot. We were well prepared for the humidity at this food centre so no complaints about that. But we were slightly distracted but the occasional loud touting occurring around us.
View on GoogleSo generous with the portions was shocked at the amount of oysters given i ordered the cheapest plate at $8. Was actually pretty good but i like my oyster omelette crispier but that's just my preference. Was interesting to note the oysters weren't fried together with the egg so i guess you could taste the "sea" LOL Waited 20 mins on a weekday, i ordered at 6.30pm, heard the wait can go up to 40mins to 1 hour during peak periods
View on GoogleTried out the fried oyster omelets from this store after strong recommendation from one drink stall aunty. Despite the strong recommendation, the oyster omelette tasted average, have tasted better ones before. Attitude and service from the oyster omelette stall aunty was atrocious. Rudely told me not to look and even tried to chase me away when I was just standing there waiting for my order. There was no table service available from this stall. They even charged $0.30 for each dish of extra chilli. I'll just patronise other stalls should I revisit. Not gonna buy from this stall again.
View on GoogleOne of the best in this part of the world. Last time had it more than a decade ago. Here's what makes this dish special, summarized in a few points: 1. The Texture: It's not a normal omelette. The special starch batter fries up to be crispy on the edges and delightfully gooey and soft in the middle at the same time. 2. The Technique: The unique method of frying a starchy batter first, then adding eggs, is what creates that signature texture. It's more of a savory pancake than a fluffy egg dish. 3. The Oysters: Fresh oysters are added at the very end and cooked for just 30 seconds. This keeps them plump and tender, not rubbery. They give a burst of savory, oceanic flavor. In short, it's special because of the contrast between crispy and gooey textures and the fresh, savory taste of perfectly cooked oysters.
