The meals are served with a clam rice appetizer. Clams were sweet and nicely marinated! Had the signature shoyu ramen. Presentation is quite elegant. The first sip of the broth was clean and light with earthy hints of black truffle oil. The noodles were thin and had a good chew and texture to them. The meats were surprisingly flavourful and well seasoned. Well portioned. However, perhaps I'm just not a fan of soup-based ramen. The broth quickly became too salty for me. The saltiness became more compounded the more I ate until it had a somewhat iodine effect, becoming almost metallic and one-note. The iced hojicha is definitely recommended because its bitterness cuts through the saltiness and monotony, making it really refreshing and welcome. My friend had the quattro meats ramen and the broth was a strange muddled flavour of ...meat. The meats were good but the. Could have used some grated garlic for more depth of flavour because the saltiness was also overwhelming and one-note but the restaurant doesn't provide it. We had a set that came with gyoza but it wasn't well-fried and had the texture of mush. It's clearly frozen gyoza and it certainly fills you up, but it's definitely not anything noteworthy nor recommended. Service was decent but they could definitely use a 3rd server during the weekends. I'm surprised by the Michelin Star and I wouldn't say it's particularly special but I had a pleasant experience.
View on GoogleWe ordered the lunch promo for Shoyu Hamaguri Soup Ramen + one side (choose from fried chicken, Thai fish cake or Gyoza) at $17, and Super Black Spicy Ramen + one side (choose from fried chicken, Thai fish cake or Gyoza) at $15. We were served a small portion of clams rice as starter. It was a little weeee salty for me otherwise it was quite OK. I wouldn't complain much about things that were on complimentary. The Shoyu Hamaguri Ramen came with two pieces of mixed cha shu (one classic and one belly) and a touch of truffle oil. The broth was light however the ramen was not tangy enough. The cha shu was not soft and flavourful enough too. The Super Black Spicy Ramen (rated with 3 chillies) was too spicy to our liking. Our tongues were on fire after the first mouthful of ramen. It numbed our taste buds and we couldn't taste anything else properly after that. It would be good if the Black Spicy Ramen (rated 1 chilli) was included in the lunch promo. The fried chicken was freshly fried upon order. It was crispy on the outside and juicy on the inside. The Thai fish cakes was normal although I wonder why the Thai fish cakes were included in a Japanese ramen menu. I added a ramen egg to the order.. It was cooked perfectly and it wasn't too salty. The service was not too bad although they weren't actively attentive. They were patient with our queries and requests, and there was no poor attitude. I am not sure if I would go back again as I was not impressed with the ramen.. It makes me wonder about the Michelin status too. However you can give it a try if you like light broth.
View on GoogleIt’s probably our preferences, but my husband and I both didn’t like the taste of this ramen somehow. We ordered both shoyu and Shio. We prefer shoyu. The black truffle taste is pretty unique and blends well buy I felt it was too oily and soup is too clear. I do like the thin version of the noodles. Karaage is spot in though, well crisped. It’s interesting they serve a small bowl of clam rice before you start the mains.
View on GoogleRamen of very high quality. The broth was addictive and had depth of flavour. The egg was decent, the pork was tender but one piece was a bit more chewy but it was a different cut. The noodles were nicely firm. Service was quite slow, and I didn't receive the "free bowl of rice" everyone was talking about. Nevertheless, I would definitely recommend a visit to this ramen shop if you are in Singapore! Follow us on insta/facebook: bittermansguide
View on GoogleTwo words: umami tsunami! While the broth is light body-wise, heavy palates will enjoy the Shoyu Hamaguri Soup Signature ($14.90) here crammed jam with flavours — think porcini, truffle, shoyu, dashi AND clams. While I usually prefer shoyu over shio-based ramen broths, the clam's delicate sweetness and briny essence in the Shio Hamaguri Soup Signature ($14.90; my favourite!) won me over. It complemented the white truffle wonderfully and I really liked the basil in the herb mix too, for that occasional bite of aromatic freshness. The chashu was tender and so was the pork belly. Love the mild nuttiness in the homemade noodles made from wholegrain Hokkaido flour! Ajitama's an extra $2; while it's soft-centered, it didn't really have much flavour. They have a few tonkotsu-based ramens (from $13.90) available too: original, spicy, and smoke and pepper, but I recommend the unique clam-based bowls here.
