This is Toyama black ramen. The soup looks pitch-black, but its flavor isn't as strong as it looks. It's pretty good.
View on GoogleUnless you order the stronger version, it isn't as salty as its black appearance suggests. It tastes like ordinary chuka soba with soy sauce and black pepper simply added to it. As a result, the balance lacks the umami of the stock, leaving it strongly flavored but somehow unsatisfying. To put a positive spin on it, you could say it has a clearly defined flavor without feeling overly intense or heavy.
View on GoogleApparently they simmer the soy sauce in a big stockpot down to about half(^◇^;)if I remember right I like soy sauce, but this〜〜I guess it's a matter of taste I can't manage it without rice, especially the chashu ramen, absolutely impossible(^.^) Apparently in Toyama they think of it as a side dish for rice I think they could adapt it a little more to Tokyo(^_^;) I can't forget the white shrimp ramen I had before, the shrimp stock really came through(^.^) Something like that, with the soy sauce a little lighter....would that be no good, I suppose they have their pride The staff used to be good, but.....even one bad person brings down the reputation of the whole place〜(ToT)/~~~ This location has seen places open and close over and over for years, all sorts of eateries have been here(´-`).。oO Since they've come all the way from Toyama, I want them to do their best They also opened at Laox in Akiba, but I wonder how that's going, I just walked past(^_^;)
View on GoogleToyama Black isn't as salty as it looks. The chashu is covered in lots of pepper, and the soup packs a punch.
View on GoogleThe soup, chashu, seasoned egg...everything is salty, so my stomach felt queasy after eating. I can't recommend it.
