This is the Japanese soba restaurant "Tachikawa Sanshu no Soba Tabekurabe Takaya" located a 5-minute walk from Nishi-Kunitachi Station on the JR Nambu Line, Hagoromo-cho, Tachikawa City, Tokyo. Founded in 1975. The second generation, who inherited the taste of the first generation, serves aged soba made with a unique "double-aging method" using soba flour milled in-house with a stone mill. Our specialty is "Sanshu-mori," where you can compare seiro soba, coarse-ground soba, and country-style soba. It is a rare soba specialty restaurant even in Tachikawa, where you can enjoy the differences in aroma, sweetness, throat texture, and chewiness of soba all at once. The "tsuyu" (sauce) is made by dividing the dashi made with additive-free bonito flakes and mackerel flakes into "kaeshi" that has been added to for over 50 years. Additive-free soy sauce...

Expect longer wait to get seated and meal to get served, but worth the wait. They serve three different types of soba noodles, but recommend trying 'seiro', standard type noodle - I believe they are the best-in-class.

I had a wonderful dining experience! The food was absolutely delicious, the atmosphere was calm and inviting, and the staff were incredibly attentive and friendly. Plus, the convenience of on-site parking made everything even better. Highly recommended!

We had the pleasure of eating lunch at Takaya with a good friend of ours (Maverick-san). We tried four different kinds of soba and were shown a traditional way to appreciate each kind of soba by complimenting the natural flavours with soy sauce, spring onion, and wasabi. The food is made fresh and is of the highest quality, and also delicious! We wouldn’t have found this restaurant without our friend, but we are grateful having the chance to eat authentic soba made by very friendly staff. The soba pudding to finish the meal was an unexpected treat - amazing!
