We want to convey the true excellence of wagyu. We handle only wagyu selected for the quality of its fat rather than the quantity, and serve it as teppanyaki cooked to its ideal doneness. Other offerings include raw meat sashimi, hamburger steak made with 100% 近江牛, wagyu yukhoe, sukiyaki, and hot-stone garlic rice. The owner travels throughout the country to secure permission to purchase the finest ingredients, bringing out their full potential and serving them simply. 近江牛 from マルキ福永喜三郎商店. Just 1 animal per 1 month: 近江牛 lovingly raised from 但馬牛 calves in the finest environment in 近江, using safe, reliable feed unchanged since long ago. This wagyu, pursuing flavorful fat and deeply flavored meat, is one of a kind. 池多牛, around 高岡, 富山県…

TSUBU is one of the best restaurants I’ve ever been to from the food to the hospitality. The restaurant is cozy and warm and my group sat at the counter. The Chef is a master of his craft using his knowledge of seasonings and high quality ingredients. Note: the restaurant is kind of hard to find so after Google says you’re there, you need to look at the outside photos, and the restaurant is downstairs basement level. Also, reservations are needed to allow the chef to prepare the dishes but we were able to book same day in the morning for a dinner reservation. Also, the money to me is worth the price. My friends and I had a 10 course meal with a mix of seasonal produce and Wagyu. The different dishes of Wagyu were perfectly complimented with side or edible garnish. I’ve had Wagyu before, but the Chef’s preparation, seasonings, and sauces take the Wagyu dishes to another level. It’ll cost extra but the extra sea urchin (uni) for one of the Wagyu dishes was totally worth it. Best uni I’ve ever had. In addition, The chef was enthusiastic and willing to use Google translate to help us with selecting our options and explaining the dishes in English. My friends and I ended up trying almost all of the Japanese whiskeys at the restaurant and I think the best was the standard Yamazaki. So when I visit Tokyo, I’ll make sure to reserve a dinner TSUBU. Also, one of the chef’s goals is to have Lady Gaga at his restaurant, LOL.

Was this the best steak I ever head? Certainly. Was this the best meal I had? Quite possibly. Were the chef and the staff the sweetest people I met? Definitely. Came for a meal, made memories. Thank you.

Food was very, very, very good. So much so, that as I was eating, I knew I wanted to go back many times. But when I was shown the bill, my ¥44,000 yen dinner for two became almost ¥100,000 <<Down below is a previous entry from a Japanese person with the same comment about extra charge>> Chef offered many toppings, but the phrasing was given as "you can select these ingredients, or these ingredients". Never were we shown or told about being charged extra, just different choices. There was no miscommunication as I was with a local Japanese speaker. This person later confirmed that other groups nearby were also not shown nor given prices verbally (as it is the nature of teppanyaki, and we were sitting close to each other). As it turned out, these few different toppongs were more than the original meal itself. I confirmed that no prices were present in the menu, or during the course reservation. For lack of a better word, and this was said by a Japanese speaker, the place is worse than a cheap hostess bar that tries to overcharge you. We felt very scammed given that no pricing was presented to us before or during the meal selection. If you do decide to go, my suggestion is to record when you are being offered various ingredients so casually, so that when it is time to pay, they can't claim they told you about the outrageous pricing for a few extra toppings.

Went for lunch and had a whole menu. Great food. It is true that there are choices to be made during the course as the person before me commented but the chef always kindly pointed out when it would incur extra cost. Can absolutely recommend.
