I’m completely hooked on this Iekei-style ramen(家系ラーメン) spot. It’s a rare standing-only setup, which adds to its character. The ramen here ranks among the best I’ve had in the Iekei category. The secret is in the broth—it’s chicken-based, giving it a refined flavor that doesn’t feel heavy on the stomach. I’ll be coming here every week!

Chicken-focused standing ramen shop 🍜🐓 A 2-3 minute walk from Yotsuya Station. Head toward Ichigaya along Shinjuku-dori, look for the red sign at "Taisei". Arriving at 11:30 AM on a weekday, there was already a line of 5-6 people. But the standing-style setup means incredibly fast turnover—you can get seated with almost no wait, which is a huge plus ✨ Inside, the owner's efficient movements are so captivating you can't help but watch. From draining the noodles to plating, every action is precise and waste-free, and the meticulous craftsmanship is palpable in the atmosphere. This time, I ordered the Special Ramen with all toppings + rice. While it has the classic Iekei look, true to its concept of "an Iekei ramen that lets chicken and soy sauce shine," the soup features the clear, savory umami of chicken as the star. The pork bone broth provides a subtle foundation, creating a wonderfully balanced, light, and easy-to-drink soup. 🐓✨ The medium-thick noodles have a satisfying chewiness that pairs perfectly with the broth. True to the Iekei style, it's loaded with spinach, nori, and a seasoned egg, making it a satisfyingly substantial bowl that keeps you coming back for more. And the chashu deserves special mention! Thick yet tender enough to fall apart, its rich meatiness spreads with every bite—making it the ultimate combo with rice 🍚🔥 The light broth ensures it stays refreshing until the last drop, letting you comfortably finish every last drop. When you want a quick, delicious Iekei bowl in Yotsuya, this is definitely a top contender—a truly satisfying bowl 👌🍜 ------------------------------------- ■Visited Shop Taisei ■Ordered Menu Special Ramen: ¥1,250 Rice: ¥200 ■Access & Store Info ・Address: 1-4 Yotsuya, Shinjuku-ku, Tokyo ・Nearest Station: JR Chuo Line [Yotsuya Station] Yotsuya Exit, 2 min walk Tokyo Metro Marunouchi Line / Namboku Line [Yotsuya Station], 3 min walk ・Hours: 11:00 - 15:00 16:00 - 21:00

A popular Iekei ramen shop at the Yotsuya intersection. It has the vibe of a standing soba shop, with the standing area fully visible from outside, yet it's a popular place that's always full with a line. I'd been curious about it, and was lucky there was no line at the time I went. The menu works by choosing the base soup with various toppings and whether you want rice, at the ticket machine. I bought 【らぁめん】950 yen and 【味玉】200 yen at the ticket machine, and was immediately shown to a spot by an energetic staff member. It arrived about 5 minutes after I took my place. The bowl has a dark brown soup with medium-thick flat noodles sunk in it, topped with chashu, greens, nori and a seasoned egg. Since it's called Iekei, I'd pictured tonkotsu, but the kitchen also has "鶏と醤油で喰わせる" (let chicken and soy sauce do the talking) written up, so it seems to be chicken-based. It doesn't go as far as tori paitan; the soup is rich yet not cloudy, as if only the umami and depth were extracted, and layered with a strong soy sauce tare it has a punchy richness that's delicious. It seemed you could customize the firmness of the noodles and the strength of the soy sauce and chicken oil to your liking, but I went with normal for everything, and even that was plenty rich, so it was the right call. The noodles have a unique shape like linguine pasta, and the flat parts grab the rich soup well, coming together with the aroma of the wheat to taste great. And the chashu was a single large, thin slice, but it was moist and tender with a rich pork umami, so delicious it was moving. With chashu like this, I regretted not getting the chashu-men with rice to enjoy it to the fullest. The staff worked briskly and energetically, which was pleasant to watch. Since it's standing-only, turnover is good and even if there's a line you won't wait that long, so next time I'll definitely go for the chashu-men with rice.
