A specialty restaurant for Xi'an cuisine that faithfully reproduces the authentic taste of Xi'an. Xi'an cuisine is centered on wheat culture. It is characterized by many flour-based dishes such as noodles, steamed buns, and dumplings. Knife-cut noodles (Daoxiao-mian) have a history dating back hundreds of years. Therefore, it is a profound dish. Of course, the signature dish here is the knife-cut noodles! A style where artisans skillfully shave the noodles after receiving an order, resulting in a satisfying texture and a strong flavor of spices. The photo is from my second visit, so I am eating a different menu. There is a menu that faithfully reproduces the authentic taste, and there are plenty of lunch sets and side menus for dinner. I think you will be satisfied with anything. And whatever you eat, it's voluminous! The interior is simple and clean, and because there are counter seats and table seats, the atmosphere was easy to use for both individuals and groups. I wonder where people come from in this area during the day, but it is quite crowded, and even when it is crowded, they guide you relatively smoothly. Business hours are divided into lunch and dinner, and the regular holiday is Monday. I have been disappointed several times by visiting carelessly... (laughs) It is a recommended shop when you want to enjoy authentic Xi'an cuisine and hand-cut noodles, and a shop where you can enjoy authentic taste with spiciness and spices. Definitely!

It's super delicious! I always eat the Mala knife-cut noodles, and it's really delicious.

Since the Mala knife-cut noodles are popular, I visited for an early dinner. When I arrived around 5:30 PM on a weekday, there were no customers and the place was empty. I ordered the Mala knife-cut noodles I was aiming for, bean sprout salad, and boiled beef. Bean sprout salad is dressed with a sour garlic sauce, and this is a delicious taste that you will get addicted to. On the other hand, the knife-cut noodles I was particularly looking forward to were just okay. It is delicious, but this is not "Mala". I felt almost no numbness from the Sichuan pepper or the punch of the chili peppers. If this is the taste of Xi'an, I shouldn't complain, but I (the wife) have lived in Sichuan, the home of Mala, so I can't help but feel unsatisfied. The boiled beef (which should be original Sichuan cuisine) didn't feel right for the same reason. The shop is clean and the knife-cut noodles were chewy and delicious, so I felt disappointed on my own, so at this point, it's 3 stars. Next time I go, I want to order dishes that are more typical of Xi'an!

I walked to my destination shop to eat udon for lunch, but it was still a long way and it was too hot outside, so I gave up 😖 The shop that caught my eye was this one. Udon and knife-cut noodles are similar things! I entered. I ordered Dan Dan knife-cut noodles from the various menus, and it came out in 3 minutes 😅 When I slurped it, the noodles were chewy and had a good texture! The soup containing sesame, minced meat, bok choy, and coriander had just the right amount of spiciness and was super delicious! Thank you for the meal. My regret is that I should have asked for a paper apron. The soup flew all over my dress shirt. 😫

I wanted to eat knife-cut noodles, so when I happened to pass by, there was a shop, so I went. I ate a large portion of Dan Dan knife-cut noodles. As expected, those noodles had a chewy texture and were irresistibly to my liking and delicious. The spiciness was just right. There are various types, so I want to go several times.
