📍魚工房 としまや/東京都新宿区 神楽坂 ✔︎ Limited quantities! Monkfish liver bruschetta (2PC)💰2,200円 ✔︎ 富士サーモン and salmon roe tartare with buckwheat-flour waffles💰2,420円 ✔︎ Meltingly fluffy shirako fritto with plenty of karasumi💰2,860円 ✔︎ Oyster and Chinese cabbage gratin with Gorgonzola cheese💰2,860円 ✔︎ Skate meunière〜An exquisite harmony of fragrant butter×sherry vinegar〜💰4,180円 ✔︎ Whitebait and fresh nori peperoncino💰1,980円 ✔︎ Bottle of AMFORA orange wine A seafood-specialist bistro in 神楽坂. Run by a married couple. I visited looking forward to the blackboard menu, which changes monthly with seasonal fish. February featured monkfish liver shipped directly from 函館. One of my absolute favorites♡🥺 Can't wait. ◾️Limited quantities! Monkfish liver bruschetta The lightly seared monkfish liver is subtly toasted outside, thick and rich inside. Meltingly soft. The fragrance of the crisp, toasted baguette and monkfish liver slowly melting on the tongue. Then a sweet-and-sour balsamic vinegar sauce sharpens the finish. This was unbelievably good. It stole my heart. ◾️富士サーモン and salmon roe tartare with buckwheat-flour waffles The diced salmon is moist and tender, with elegant fattiness. The salty pop of the salmon roe adds an accent. Tartare really is deliciousss. The buckwheat-flour waffles are crisp and crumbly. Subtly toasted, gently supporting the creamy tartare. Cute looks, serious flavor, ◾️Meltingly fluffy shirako fritto with plenty of karasumi This is from the blackboard menu. The coating is light and crisp. The shirako inside is piping hot. Soft, oozy… melting。。 Then the saltiness and umami of generous shaved karasumi join in, taking the richness up another level. A squeeze of lemon instantly brings the flavors into focus, keeping it interesting to the last bite. Happiness. ◾️Oyster and Chinese cabbage gratin with Gorgonzola cheese I ordered this because I wanted gratin. The crunchy surface was irresistible even before eating. Inside, piping hot and creamy. The oysters are plump and meaty, bursting with savory juices when bitten. So much oyster essence comes out that the white sauce is insanely delicious. Sweetened Chinese cabbage and the deep, rich aroma of Gorgonzola. Rich but well-balanced in saltiness, the kind that keeps the wine flowing. ◾️Skate meunière 〜An exquisite harmony of fragrant butter×sherry vinegar〜 Golden and fragrant outside, fluffy and moist inside. The tender, fluffy flesh unique to skate is delicious. The cartilage has a lovely crunch and is so good. Rich browned butter with the gentle acidity of sherry vinegar. Add the slight tang of capers, and it's delicious. ◾️Whitebait and fresh nori peperoncino An extra dish I ordered because I simply had to try it. It arrived looking incredible. The aroma was amazing. The sea was right there before me. Haha Fresh nori softly coats the chewy fresh pasta. The saltiness of whitebait and the aroma of the sea spread gently, followed by fragrant garlic. The oil isn't too heavy, so it goes down easily. Delicious. ◾️AMFORA orange wine A soft amber color the moment it enters the glass. Slightly cloudy, already captivating in appearance. The aroma has notes of dried apricot and orange peel. Along with a hint of mellow, toasty black tea. On the palate, fruitiness gradually spreads. Almost no sweetness, with firm acidity and a lightly bitter tannic finish. A wine with delicious astringency. A presence that stands up to the richness of monkfish liver, the creaminess of shirako, and the depth of Gorgonzola. A place that serves seasonal fish in its most delicious form. Careful, elegant, and delicious. Very satisfied. Thank you for the meal🙇

A place for natural wine and creative seafood-only cuisine. I booked and visited on Friday night! I was completely satisfied with all the food and wine🍷! The layered grilled conger eel and foie gras came with a huge piece of foie gras right on top, making quite an impact💯 Who knew conger eel and foie gras went so well together… Eaten together, they melted in my mouth〜♡ The spicy shrimp and white fish Bolognese was fantastic too! It was my first meatless Bolognese, and I expected a lighter flavor, but it was thoroughly rich! I loved it so much I felt this could be my Bolognese from now on🤩 I also ordered a taste of autumn, Pacific saury simmered in oil. Slow cooking made even the bones beautifully tender. Wonderful. I ordered bread too, and it was so good I wished I'd ordered more! All the wine was delicious too, and I'd like to go again!
