煮干中華そば 鈴蘭Niboshi Chuka Soba Suzuran Shinjuku
Small, bustling restaurant offering traditional ramen noodles & rice bowls, plus beer.
A double soup combining a fish dashi made mainly with niboshi carefully selected from across Japan, and a paitan soup made by simmering genkotsu, chicken carcasses, chicken feet, and more for a long time. You can choose from two kinds of noodles: medium-thick wavy noodles and low-hydration thin noodles.

I will recommend this place for its tsukemen. It’s a fish soup instead of pork. The flavor is delicious and the portions are also good for its price.
View on Googlecame to this place by the fact that it is Niboshi-based broth and had to say that it is really yummy, the umami flavor of grilled Niboshi is really dominating. Would definitely come back for another type of ramen eg Tsukemen
View on GoogleOne of the best Niboshi Soup-based noodles in Shinjuku is Suzuran. Here the soup is great that it is drinkable. Niboshi usually have a bitterness but here don’t know why it doesn’t have a bitterness, it is more like richful dashi flavor with an ingredient of niboshi. Put simply, The soup has richful Dashi taste mixed with the expensive soy source. The noodle, soup, ingredients such as an egg, a slice of roasted pork fillets, and a diced onion. What I call the good ramen is everything including noodles, soup, and ingredients match on the same high-standard line. That means, the good ramen must not have a specific point because the good ramen is all good on everything. Here then I’m sure this is the one of the best ramen in a Niboshi genre aka the good ramen. Have a wonderful time and enjoy your rest of your day with full filling with your heart and stomach
View on GoogleThe fish based broth was an excellent mix up from the more common pork broth. The toppings came in generous portions as well. It's made for in and out dining and small parties (1-2). Great food and affordable for a lunch spot.
View on GoogleNoodle: 5⭐️ Soup: 5⭐️ Meat: 5⭐️ Egg: 5⭐️ Big clean space, friendly service. They sale Niiboshi soup. It’s a kind of soup that made out from boiling dry fish. It’s not the kind of ramen I usually like but this one is really good, clear looking soup has perfect fresh fish taste. Eggs is red liquid inside with bit sweetness, meat is more like roasted meat, dip it in the soup makes it taste even better. The only thing is the soup get cold really fast, Hope they have soup reheat service. I like here.
