New shop with very limited seating that requires a reservation and minimum order. Cakes are nice but quite expensive.
View on GoogleA sister shop of Minimal, whose main store is in Tomigaya. Open the door of the stylish exterior, and beautiful pastries are displayed in a refined space. I've tried various things at their locations around Tokyo, but this time I had a sudden craving for tiramisu, so I bought one right away. A beautiful layered creation in a transparent square cup. As you dig in with a spoon, the slightly bitter coffee soaked into the moist sponge harmonizes perfectly with the rich yet melt-in-your-mouth cream. The aroma of the cocoa powder is pleasant too, and the balance of sweetness and bitterness is meticulously calculated. The financiers baked that day, which I also bought for relatives, have a light, crisp surface and a moist interior. Rich butter and fragrant almond fill your mouth, leaving a luxurious finish unique to being baked that day. A high-quality patisserie that adds color to everyday life, with carefully chosen ingredients and meticulous craftsmanship apparent throughout. If I get the chance, I'd like to enjoy freshly made parfaits, cakes, and other sweets at the shop's counter.
View on GoogleThere are only 4 counter seats, and you can watch the parfait being made right in front of you!! As you'd expect from a chocolate specialty shop, the parfait's chocolate ice cream was impressive—a sophisticated flavor I'd never experienced, though not bitter. It paired beautifully with Kiyomi orange, making me very curious about their seasonally changing parfaits. Since I visited on Sunday, many people came in to buy cakes and baked goods, making the atmosphere a little restless. Still, the counter with just 4 seats felt special, which was lovely.
View on GoogleThat day, I headed to Soshigaya-Okura. Dinner that day was in Soshigaya-Okura. I got off at Soshigaya-Okura Station on the Odakyu Line, left through the south exit, and headed south along "Soshigaya-dori," where I found my destination for the day, 『Patisserie Minimal』. The shop is described as follows: 『A patisserie with an attached workshop expressing the appeal of cacao. Minimal's first patisserie sweets have arrived, using Minimal chocolate that expresses cacao's individuality. Enjoy a new chocolate experience full of “firsts” previously unavailable at Minimal: fresh pastries such as chocolate cakes and shortcakes finished daily, baked goods such as freshly baked financiers, and plated desserts offering the freshness of being made to order.』 I've been checking the Instagram of Chef 内田 将太, whom I've known since his previous job. Seeking the reservation-only parfait, I booked through TableCheck and visited, taking one of just 4 counter seats. What I had that day was: ①Fruit and Chocolate Parfait -Melon-, 3,300 yen including tax According to the shop's Instagram: 『Starting 6月6日, we will offer a chocolate parfait generously featuring the rare 「優香」 melon from Ibaraki Prefecture, along with a charlotte reinterpreting a traditional dessert through fruity chocolate! ※Reservations are scheduled to open on 2026年5月30日 (advance reservations required) Part 1: 「Fruit and Chocolate Parfait -Melon-」 ̄ ̄ ̄ ̄ ̄ ̄ ̄ ̄ ̄ ̄ ̄ ̄ ̄ ̄ ̄ ̄ ̄ ̄ ̄ ̄ ̄ ̄ The star is the rare 「優香」 melon from 「ファーム長洲」 in Hokota, Ibaraki Prefecture. A special variety rarely available on the market, with a rich, elegant aroma and meltingly tender flesh. Delicate, juicy melon is difficult to combine with rich dark chocolate. Achieving that exquisite balance is Minimal's 「CLASSIC」 chocolate, with cacao's natural flavor and gentle sweetness. Layers of Dong Ding oolong tea, elderflower, mint, and lemon further highlight the appeal of melon and chocolate. 12 layers of flavor that change as you eat. Experience it at our Soshigaya-Okura shop. Part 2: 「Chocolate Charlotte」 ̄ ̄ ̄ ̄ ̄ ̄ ̄ ̄ ̄ ̄ ̄ ̄ ̄ ̄ ̄ ̄ ̄ Based on the traditional French dessert 「charlotte」, it layers the fruity character of cacao from 3 origins—Peru, Tanzania, and Madagascar—to express “fruit” through chocolate. Rich bavarois, jelly and ice cream made from rare 「cacao pulp」, a sauce of 3 berries, and vanilla come together in a dish that explores cacao's appeal as a fruit from multiple angles. ▼Sales information 【Prices】 Fruit and Chocolate Parfait -Melon- ¥3,300(including tax) Chocolate Charlotte ¥2,300(including tax) 【Availability】Saturdays and Sundays from 2026年6月6日〜7月26日 【Shop】Patisserie Minimal Soshigaya-Okura ※Please book through 「祖師ヶ谷予約」 in the profile link #シャルロット #メロンパフェ #チョコパフェ #東京パフェ #世田谷カフェ』 I watched Chef Uchida finish it right before me, and was served an elegant, photogenic melon parfait, completely different in style from those at his previous workplace(⋈◍>◡<◍)。✧♡ First, photos and video p■qω•,,´)snap Its components were coconut meringue, chocolate cookie, 優香 melon, cacao pulp and fromage blanc sorbet, Dong Ding oolong chocolate ice cream (CLASSIC), ganache montée (CLASSIC), melon and mint granita, crumble (CLASSIC), 優香 melon, lemon and elderflower jelly, mascarpone cream, and melon marinated in カカオパノレプ. I enjoyed the crisp texture and flavor of the coconut meringue, then the beautiful, delicious chocolate cookieヽ(^∀^*)ノ The star, the rare 優香 melon from ファーム長洲 in Hokota, Ibaraki Prefecture, greeted me with juiciness and exceptional sweetness(*>∇<)ノ The cacao pulp and fromage blanc sorbet was refreshing, while the Dong Ding oolong chocolate ice cream was rich with an elegant finish(* ̄∇ ̄)ノ The richness of the ganache montée and the freshness of the melon and mint granita made an exquisite harmony, with crumble adding texture before another delicious helping of 優香 melonヾ(´▽`*)ゝ I finished with refreshing lemon and elderflower jelly, smooth mascarpone cream, and elegant melon marinated in cacao pulp°˖✧◝(⁰▿⁰)◜✧˖° ②Roasted tea and lemongrass, ICE, 600 yen including tax Alongside the parfait, I enjoyed the cooling, gentle tea(´▽`) sigh of contentment I can't wait for Chef Uchida's future parfaits(^_-)-☆
View on GoogleI had the strawberry-filled parfait. Not only did it look beautiful, but it also had a substantial amount inside and was very satisfying! I'd been worried because some parfaits come in what look like tiny cocktail glasses, but this shop used a properly roomy glass. The male staff member carefully explained every component as he assembled it. Besides the éclair, cheesecake, meringue, and creams, even the strawberries themselves were carefully chosen—very sweet and flavorful. Also, after a succession of rich components, the lychee sorbet toward the end was refreshing, and I thought it was very well planned. So many textures packed into one, like tasting a box of surprises^_^ Even I, who am not that keen on chocolate (), enjoyed it to the very end. There were no parts bulked out with sponge or jelly, which I thought was wonderful! The eat-in area is just one row of counter seats, not tucked away, so I felt a little unsure at first, but since not that many customers came in, I could actually eat quite peacefully! It's expensive, but it was truly satisfying, so I think it's a wonderful parfait worth trying once🎶
