The environment would definitely be impossible for anyone expecting a clean restaurant interior. This was my 2nd visit. The noodles are thick like udon and quite firm. That makes this a dish that really triggers your sense of fullness. You can choose the noodle quantity in detail, such as regular or smaller, so I recommend a smaller portion for first-timers. The wait was long on my first visit, but there were complimentary extras and such, showing a service-mindedness you don't usually find at Jiro-style places. Quail eggs and raw eggs seem to be cash-only rather than available through the ticket machine. It's quite an eccentric place, but sometimes you get a craving for it. That's the kind of place it is.

If you like the sort of places known as Jiro-style shops, I don't think it'll bother you. It's not a ramen shop for bringing kids or going as a couple. The soup and チャーシュー are genuinely good. On the day I visited, they said they were using their thickest noodles, so thick I could only eat one strand at a time. It felt like chewing dried squid. By the time I finished, my jaw was completely exhausted and took 2 hours to recover.

I visited 蓮爾 新町一丁目店. It's a so-called Jiro-inspired bowl, with a substantial sense of volume from the moment it arrives. A mountain of bean sprouts, thick pork, and plenty of chopped garlic make for an imposing appearance. The soup leans toward emulsified, with richness and a sharp soy sauce edge. It's heavy, but without unpleasant off-flavors, so it goes down more easily than expected. The noodles are extremely thick with a dense, chewy texture. They have plenty of bite and hold the soup strongly, so preferences will definitely differ, but fans of this style should find them very satisfying. The pork is thoroughly cooked without being dry, and well infused with flavor. Changing things up with the raw egg on the table makes the second half easier to eat too. The interior has a stripped-down feel, with an atmosphere of quietly concentrating on your food. Turnover is a priority, but the serving itself is careful and doesn't feel slapdash. It's not for everyone, but it's highly accomplished within this genre, with a flavor you'll crave regularly. I think it's a reliable choice on days when you want a hearty meal.

In pursuit of Jiro, I went to the nearby 蓮爾 and ordered fat, vegetables, garlic, and extra seasoning. The チャーシュー was delicious and well infused with flavor too!! The noodles have a very pronounced wheat character, but since I wanted something hearty, I was very satisfied! People who dislike floury textures or firm noodles might not enjoy them. It's become my 2nd-favorite Jiro shop. They seemed a little happy when I ordered Jiro, which was nice too. But make sure you don't leave any food!
