ど豚こつ 翔己Do Buta Kotsu Sho Onore
NEW OPEN July 15th. Simply delicious Tonkotsu. Boiling a large amount of domestic pork bones for over ten hours to extract the umami from the core of the bones, suppressing the off-flavors, and creating a soup with a golden ratio that is "rich but not cloying". Paired with it are custom-made, low-hydration, extra-thin straight noodles. The entanglement with the soup is exquisite, and because they are thin noodles, fast service can be realized. Even in a busy daily life, you can taste an authentic bowl. It comes with a "punch" and leaves "smoothly". Experience the "drinkable Tonkotsu" with your five senses.

A newly opened ramen but it tastes like previous closed Okinawa restaurant.
View on GoogleWhen I was looking at the menu outside, a foreign female staff member said "Welcome, please come in" and it felt good, so I decided to enter. When I was about to buy a meal ticket at the entrance, they said it was okay inside, so I was able to order from the female staff while looking at the menu at the seat. When I ordered gyoza, they said they couldn't do it because it wasn't prepared (lol). I paid by card, but I didn't get a receipt (lol). It's a tonkotsu-based ramen, and because the bowl is small, it looked like the amount was small, but it contained quite a lot. Rich tonkotsu soup and delicious. Satisfied. Grilled pork bowl was also delicious. At each table, condiments such as Nozawana?, red ginger, ground sesame, pepper, vinegar, etc. are well-stocked. Finally, I want to put white rice in the soup. It was run by two people, a man cooking in the kitchen and a woman in the hall, but the foreign female staff member moved with agility and efficiency, and it looked very practiced, which made me feel good watching it. Three women sitting next to me were also eating ramen and grilled pork bowl. Delicious. It is a ramen that I definitely want to visit again! Please try it once.
View on GoogleDo-Tonkotsu Shoki — Contrary to the name, the aftertaste is refreshing. A bowl that is just right after drinking. I entered because I was attracted by the impact of the store name. Because the name is "Do-Tonkotsu" (Extreme Tonkotsu), I imagined something super rich, but actually it was a tonkotsu ramen that could be eaten surprisingly refreshingly. (If you go expecting something super rich, the image might be a little different.) But this day, after I had drunk and eaten a lot. This lightness was just right, it went into my stomach gently, and it felt very delicious. What was even more surprising was, that they were holding a Great Thanksgiving Festival. Amazing ・Ramen 500 yen ・Plus 1 free noodle refill With this content and this price, honestly, this is an incredible big service. While still having the umami of tonkotsu, the aftertaste does not become heavy, so it is perfect for the end of a drink. Including cost performance, this is a shop I definitely want to stop by if the timing is right. I want to come to eat again casually like this.
View on GoogleI enjoyed the salt flavor of Shoki Ramen (900 yen). The soup is rich but not cloying and easy to drink. The noodles are thin and straight. There are 6 levels of noodle hardness, and I felt "Bari" (one level harder than normal) was just right for me. It's nice that the noodle refill is free once♪
View on GoogleJanuary 2026, visit around 19:40 on a weekday. The interior is set up with only 12 counter seats in a row, and there are 3 previous customers. I bought a ticket for Shoki Ramen (900 yen) at the ticket machine, and when I handed it to the staff, they asked "How hard should the noodles be?" and I reflexively replied "Hard". It was finished in about 1 minute of waiting. The soup, where you can feel the particles of tonkotsu melting, has a powerful tonkotsu aroma and taste. I like strong tonkotsu soup like this. The noodles are mushy and have a strong floury taste. If you slurp a lot and swallow, you might feel like your throat is blocked, but I deliberately accept this as the real thrill of low-hydration noodles. Next, I ordered a noodle refill (free up to 1 serving) with extra hardness. This adds a more chewy and strong resistance, further increasing the resistance to swallowing. When I looked at the noodle box, there was a print of Kanno Seimenjo, and I was convinced, that's why the quality is high. The chashu is a greasy type with fat seeping out. I'm happy with the large amount of wood ear mushrooms. I put in spicy mustard greens and red ginger from the table to head to the finish, but there was a little sadness in the strong commercial feel of these condiments. I would like to visit again if I want to eat floury noodles.
