紀の家@Kabe ラーメン(並)¥790, やく味玉ねぎ¥100, ネギご飯¥320 “紀の家,” a Hachioji ramen specialty shop near Kabe Station on the Ome Line. The soy sauce broth, fragrant with dried fish flakes, has a slightly sweet kaeshi seasoning and a flavor closer to Japanese soba. The medium-thin curly noodles have a distinctive, slightly dry and crumbly texture. The char siu is a small piece of braised pork. The ネギご飯 portion is quite modest.
View on GoogleThe shop is visible as you walk from Kabe Station, and I’d been curious about it for ages. I finally went to eat there with my son. It’s compact, but turnover is quick, so that didn’t seem to be a problem. My son’s friend recommended the green onion ramen, so we both ordered it. The ramen had a delicious soy sauce broth, and the firmness and smoothness of the noodles suited it well. The green onions tasted even better soaked in the soup, and my son and I were both very satisfied. We talked about the ramen all the way home. Next time I’d like to try the char siu too.
View on GoogleHachioji-style ramen in Kabe. The broth might be a little weak. But it has an old-fashioned feel, so I go to eat there now and then.
View on GoogleVisited Friday lunchtime. I timed it well and got a seat, then more customers arrived and it immediately filled up. Service might be faster than at a typical ramen shop. The bowl arrived right away. There aren’t many seats, but since service is quick, you might not have to wait too long. This is Hachioji ramen. I ordered green onion ramen and a green onion rice bowl. The green onion ramen has no char siu. The rice bowl tasted similar to Ramen Shop-style versions and was delicious! The ramen also has a flavor that makes you want it again. If I could ask for a little extra, customers might appreciate unlimited onions like at some Iekei ramen shops~. It’s somewhere I’d like to stop by again when nearby.
View on GoogleVisited again after a long time 😊 I had old-fashioned chuka soba-style green onion ramen with 1 slice of meltingly tender char siu added. I eat Jiro-style and Iekei ramen too, but this is what ramen that’s gentle on the body means. Light yet rich in flavor, and delicious.
