Dip our carefully made, smooth and glossy medium-thick homemade noodles, prepared at the shop every morning, into a soy-sauce-based dipping broth made from seafood, vegetables, pork bones, and chicken bones, finished with a balance of spiciness, sourness, and sweetness. To finish, we offer broth to dilute your dipping sauce. It's a busy place. On Saturdays and Sundays, people line up before it opens. It's so good that this is the place that comes to mind when you think of tsukemen. The noodles are smooth, springy, and delicious. The soup is delicious, too. Be aware that it's different if you come expecting tsukemen from an ordinary ramen shop. But once you try it, you'll be hooked. The photo shows toku tsuke with extra vegetables and a mini buta mayo don.

つけそば屋麺楽@Kabe Tsukesoba ¥800, ajitama ¥100 「麺楽」 in Kabe serves sweet, spicy, and sour tsukesoba inspired by Marucho. The glossy noodles are medium-thick and round, smooth and chewy❗️ The dipping broth starts with sweetness, followed by sourness and heat. Although it feels a little on the sweet side, the stock from animal ingredients and dried ingredients is full-flavored and delicious❗️ There's plenty of chopped naruto, green onion, and chashu, making this tsukesoba enjoyable for its changes in texture, too❗️ To finish, I diluted the dipping sauce with broth and drank it down. Thanks for the meal😋

This is a place in Kabe with huge lines. This time I visited on a weekend, so more than 20 people were waiting. I arrived after 14:00 and got in after 14:30. Even though I'd avoided peak time, the line was impressive. I waited about 30 minutes in the blazing sun. They came to take orders while we were in line, so my bowl arrived almost as soon as I entered! I ordered toku tsukesoba. Apparently, the owner respects the flavors of Mejiro Marucho, which he visited for years, and taught himself to create a flavor to his own liking. The spiciness and sourness of the dipping broth can be adjusted. Naturally, they also offer broth to dilute the sauce, with written instructions about it. Trying it, I could indeed see the Mejiro Marucho inspiration. Similarities show through in the menma, naruto, noodles, and so on. When your appetite drops in summer, the sourness and sweetness of this tsukemen bring it back. Thanks for the meal.

About a 15-minute walk from Kabe Station on the Ome Line, this hugely popular tsukemen shop always has a line. With parking available, many customers come by car. I'm one of the fans drawn to its appeal, too. An exquisite balance of sweetness, spiciness, and sourness is concentrated in the dipping broth, which coats the smooth, springy noodles beautifully. It's truly delicious! The fun of adding ajitama or vegetables to the basic dipping broth and customizing it to your taste is another reason for its popularity. Men can choose large, extra-large, or super extra-large portions, so those wanting a substantial meal can be thoroughly satisfied. The broth-diluted dipping sauce after the meal has an exceptional aroma and flavor, making you drink every last drop. A line is inevitable, but this bowl is worth coming for anyway.
