Tanmen The soup itself is very light Then there is a large amount of oil The inclusion of chashu, egg, and green onions feels typical of a ramen shop
View on GoogleI had known for a very long time that this place was on this street, but something about its exterior put me off, and I kept staying away. This time I happened to feel like it and went inside. I was surprised when I entered🫨 It feels like a ramen shop from two decades ago, with a flavor that is exactly 「元祖味噌ラーメン屋さん」. It is a restaurant that keeps maintaining its dependable deliciousness, and the homemade chashu is tasty too. This time I had 「味噌󠄀チャーシュー麺」😊 The parking lot is beside the restaurant. A kei car can park without trouble, but if you drive a larger car, parking is a little difficult, so take care⚠️.
View on GoogleOne of the good things about 味源 may be that each location tastes a little different. This is a 味源 I like.
View on GoogleIt is near the 河辺 intersection on 奥多摩街道. At lunchtime on Sunday, nearby restaurants were too crowded to get into. While driving around looking for a restaurant, I saw that the parking lot beside this one was empty and stopped in. It looked a little worn, and since I had not researched it, I did not expect much at first. I did not even know what kind of ramen it served, but the restaurant's name indicated Hokkaido ramen. The noodles are shipped directly from Hokkaido, and the soup, seasoning sauce, and chashu are all homemade; this might be promising. Inside are 2 tables and counter seating. Once you sit down, a staff member brings water. The ramen comes in miso, soy sauce, and salt flavors; soy sauce and salt are 700円, and miso is 800円. This time I ordered miso ramen with a large serving for an additional 100円 and chashu for 300円. You can choose loin, belly, or a mix for the chashu. It arrived in less than 5 minutes while I was looking around the restaurant. The soup was slightly sweet, rich, and delicious. The noodles were yellow, thin, curly, and firm. There were 6 slices of chashu; the loin was substantial and meaty, while the belly fat melted in my mouth. Partway through, I added plenty of garlic, pepper, and ichimi, changing the flavor as I finished it in an instant. It felt like my first authentic miso ramen in a long time. Quite a lucky accidental find. Payment is cash only.
View on GoogleMiso, でっかいどうらーめん ①Soup (3.5 / 5.0) →Tasty. I drank it feeling nostalgic and remembering the past. The faint chili aroma is nice too. Apparently the flavor can be adjusted, but I went with the default. Depending on the day, extra oil might be nice too. ②Noodles (3.0 / 5.0) →Perfectly tasty. 小林製麺—these really are the kind of noodles you want with miso. ③Chashu (3.0 / 5.0) →Also perfectly tasty. Nothing particularly noteworthy, though. But not enough to make me want to order chashu-men. ④Vegetables (3.5 / 5.0) →Plenty of toppings. Bean sprouts, green onions, wakame, menma, seasoned egg. The amount of vegetables makes you think, this is how miso ramen should be! The flavors are nothing special, but each plays its part adequately. The hard-boiled seasoned egg was unexpectedly good. I like soft-boiled eggs too, but hard-boiled is a must for this ramen. ⑤Overall portion (3.5 / 5.0) It was a satisfying amount for when you simply think, let's have some miso ramen! Today I wanted a fairly hearty meal, so I also ordered rice and gyoza, but apparently they offer extra noodles too, which is great. Overall assessment (16.5 / 25.0) →Quite tasty ramen🍜 Somehow it felt like I had eaten “miso ramen” for the first time in ages. I was more satisfied than the score suggests. Miso ramen 800円 でっかいどう 300円 Gyoza(6 pieces) 400円 Rice 200円 Total 1,700円 Honestly, I think the gyoza are expensive. If I could ask for more, I would be happy if the rice were 150円 too. When ordering, I was offered the “Gyoza(3 pieces)&small rice” set for 250円, but I was sure it would not be enough, so I ordered everything separately, and that was the right choice. There used to be lots of 味源 locations in many different places. Personally, I like the unchanged, nostalgic flavor and the restaurant's atmosphere. It is a shame the parking lot is small, but even at lunchtime there were only 2 customers before me and 1 afterward, so it was not a problem. Ramen keeps evolving, and I want to eat increasingly delicious ramen, but sometimes I also crave old-fashioned ramen like 味源.
