Pork ramen + vegetables, garlic, fat. The vegetables are about 150 grams of crunchy bean sprouts and cabbage. The garlic is about 1 teaspoon. The fat is liquid, not chunks of back fat. The noodles are medium-thick, straight, leaning towards round, chewy, and have a soft texture that absorbs the soup well. Are these homemade noodles? They have a handmade feel, like mochi with a wonderful chewiness. It makes me imagine they would go well not just as ramen noodles, but also with cold sweet desserts like oshiruko or anko. Or mitarashi. The soup is non-emulsified, giving a clear soy sauce pork vibe, but with the liquid fat, it becomes slightly emulsified, mild, and the pork umami is felt richly. There was something like soy sauce seasoning on the table, so I think it can be fine-tuned. The pork is tender, sometimes melting in the mouth, with a soy sauce base that reaches a divine level. Thinking it was created to match the gentle soup, I'm sure it would also be delicious as a mock pork bowl with white rice. It's worth enjoying the original noodles that shine with a divine brown color from absorbing the soup.

A famous independent shop run by someone who was an assistant at Mita Jiro. First visit on a weekday before noon. Around 11:45, luckily no wait and got seated. Ordered small ramen, call was garlic only. The soup isn't sharp, feels gentle, but the pork bone flavor is strong, and even without asking for fat, this Jiro soup already has plenty of liquid fat. The noodles are distinctive. Medium-thick homemade noodles, high water content, not stiff, with a smooth and chewy texture. A type rarely found in Jiro-style, and combined with the soup here, it makes you eat voraciously. A unique and unparalleled deliciousness👍 The pork, vegetables, and the garlic I called for felt a bit modest. But everything is properly delicious. Next time I might call for extra vegetables. The owner's attentiveness, cheerful voice, and movements create the shop's atmosphere, which feels a bit sharp. I don't dislike it. Full, very satisfied, thank you for the meal🙏

I went to a shop that is Jiro-inspired. Pork ramen 1,250 yen, mini curry 450 yen, quite a price. The pork soup is delicious, and the smooth, chewy noodles (not stiff) were tasty and I enjoyed them. The mini curry was a slightly thin type with noticeable spices. The regular pork ramen portion was already large, so I couldn't finish it. Sorry I also left the mini curry. There are about 8 counter seats inside, visited during weekday lunch, 5-6 people waiting outside, waited about 25 minutes. Popular shop. Operations by the owner in the kitchen and a woman in the hall. Although the two worked efficiently, I felt the atmosphere was not good. During my stay, I witnessed the owner scolding the woman in the hall multiple times. It was more of a reprimand than guidance in front of customers. I thought it was inappropriate. Doesn't the owner see the reactions of the office workers who were wide-eyed witnessing that situation? It's a shame, even though it's a popular shop.

A bit too delicious! Visited around 13:00 on a weekday. Waited in line outside, 2nd in queue. Asked for my order by a lady, then guided inside when the shop cleared. Bought a ticket at the machine as ordered. About 15 minutes after sitting down, the ramen arrived. The vegetables had plenty of cabbage (the lard aroma is the best) The pork was nice The noodles were soft and smooth Anyway, it's delicious!
