Very good ramen and super tasty. But the service is SUPER SLOW. I've been there 3 times so far, and It took 20-30 minutes everytime to receive my meal. That's a long wait for a ramen bowl :)

Ramen without chemical seasonings. Strangely, it makes you feel you've eaten something good for your body. Also, for some reason, the water tastes good. There are counter seats and face-to-face seats inside, and it doesn't feel particularly cramped. The meal-ticket machine is straight ahead as you enter. They offer limited-edition noodles every Sunday, so I used to check Twitter beforehand and go when the flavors suited my tastes. There can be a fair queue on limited-menu days, so I think it's better to avoid peak times slightly. Once you try it, I think you'll understand how much care goes into the ingredients. They also have Jiro-style noodles, again without chemical seasonings. By far the strongest garlic hit of any Jiro-style ramen I've eaten. It'll definitely linger until the next day, but it definitely hits the spot. Give it a try.

A niboshi-based ramen shop. They introduce a limited menu every Sunday to attract repeat customers. This time I had game-meat ramen, and the rice dish was horse meat sushi. The regular signature niboshi ramen costs around 800円, while Sunday's limited offerings cost around 1500円 for ramen and 300円 for rice dishes, so the price difference feels considerable. (Prices vary with each week's ingredients.) Depending on the season, salmon roe, sea urchin, and other ingredients appear, so check Twitter to avoid missing out. On Sundays they open at 12, but some people start lining up around 10 for the limited menu. They seem to prepare around 70 servings each week, and my impression is that they sell out around 15. The downsides are probably the long queue and the longer wait after entering compared with other ramen shops. As a ramen enthusiast, queuing is unavoidable, but I'm concerned that having to wait after entering too may give some people cause to complain. It's delicious, so I'm looking forward to more wonderful limited menus! A niboshi-based ramen shop. We offer a limited menu every Sunday to attract repeat customers. At this time, I ate gibier ramen and the rice menu was horse meat sushi. The normal signboard niboshi ramen is about 800 yen, but the price difference is large at 1500 yen for ramen and 300 yen for rice on Sundays. (It varies depending on the ingredients of each week) Depending on the season, salmon roe and sea urchin will appear, so if you check Twitter, you won't miss it. On Sundays, when the store opens at 12:00, there are limited menus that some people line up from around 10:00. It seems that about 70 meals are prepared every week, and it seems that they are out of stock around 15:00. The negative point is that the line is long and you have to wait compared to other ramen shops after entering. As a ramen connoisseur, it's unavoidable to line up, but it's a concern that some people will complain about waiting after entering. It's delicious, so I'm looking forward to a wonderful limited menu in the future!

When they first opened, the niboshi aroma was strong but the taste was just okay. I said something like, 'That's enough for me,' and ignored the place for several years. Then one day, something gave me the chance to visit again, and the flavor had evolved tremendously! The balance of the stock had become refined, and its harmony with the noodles felt upgraded. I vaguely remember the name originally being something like 'niboshi ramen,' but now it's '似星そば,' firmly incorporating the shop's name. Choosing the word 'soba' feels like a sign of their dedication. On Sundays they have a weekly limited menu, and these are also consistently outstandingly delicious. But quantities are small and the queue is huge, so with my poor health, queuing is hard, and I haven't been in quite a while. Prices are high, but the flavor is dependable. Definitely check Twitter for details of the limited menu. I imagine running the business during COVID is difficult. With fewer staff, these must be tough days, but I hope they can somehow get through them and keep evolving.

・明けまして似星 「2020の余韻」 (20210101 exclusive). Following last year, I visited again on January 1 this year. Their limited dishes are made entirely according to intuition and imagination, so they generally don't keep recipes. They've already served many limited-edition noodles, but this time they boldly priced it at 1500円. The contents were correspondingly incredible! The soup was a clear soy-sauce base, perhaps with a little niboshi, very easy to drink and delicious! The thick noodles were chewy, carried the soup well, and tasted great! So far, ordinary chuka soba, but the toppings were extraordinary! Alongside luxurious ingredients including crab, monkfish liver, roast beef, truffle, and abalone, there were tofu, radish sprouts, and sudachi. None of the usual chashu or menma. I'm not sure how to describe it, but everything was seasoned to match the soup, making it truly luxurious and delicious. The refreshing sudachi also provided a lovely change of flavor, very tasty! For 1500円, this was excellent value. Given the premium ingredients, limiting it to 60 servings was understandable. A truly special bowl that broke previous conventions. ・二〇二〇初似星〜蟹出汁のラーメン〜 (20200101 exclusive, priced at 1100円, limited to 70 servings). They were open for New Year, so I visited after a long while. The crab-stock soup had a pronounced crab flavor and just the right saltiness. Very delicious! The medium-thin noodles contained whole wheat and were supple, pairing perfectly with the soup! The 3 slices of chashu had a satisfyingly meaty texture and were delicious! Shiso and spinach added nice accents. The seasoned egg's yolk was exquisitely flavored and delicious! They also included complimentary mochi for New Year. A fitting bowl for the occasion! ・ウニトン+強いTKG (October 5 exclusive). Tonkotsu ramen fragrant with sea urchin. The crustacean-infused oil added a nice accent, making it very well executed! The TKG was rice topped with raw sea urchin, premium sea urchin sauce, and a good egg. Unquestionably delicious!
