About a 3-minute walk from the north exit of Toritsu-Kasei Station. Set in a quiet neighborhood, the renowned 「食堂七彩」 never has a shortage of customers. Inside, the warm atmosphere feels somewhat nostalgic, and it's easy to come in alone. I wait for my ramen while watching the chefs work skillfully. So this time, I ordered the classic 「喜多方ラーメン（しょうゆ・1,050円）」. When the bowl arrives, the first thing that catches my eye is the beautifully clear, amber-colored broth! With one sip, the savory richness of the animal-based broth and the full flavor of dried sardines spread in perfect balance, while the crisp aroma of soy sauce ties everything together. But the real showstopper is the wide, irregularly wavy, high-hydration noodles kneaded by hand. Their chewy springiness and the way they slide smoothly down your throat are irresistible! They hold the broth exceptionally well, and the sweetness of the wheat comes through with every bite. The chashu made from different cuts is also superbly prepared, bringing out each cut's meaty flavor. It's as delicious as its reputation suggests, and I'm thoroughly satisfied, but be aware that a renowned place like this is bound to get crowded at mealtimes. I recommend allowing plenty of time for your visit. I think this is an exceptionally accomplished bowl of ramen that every ramen lover should try at least once.

Visited on March 20, 2026 喜多方らーめん醤油 ¥1.050 ◇When I visited at 13:10 on a Friday public holiday, 3 seats were available There are only 9 counter seats inside ◇The 2 main menu items are 喜多方らーめん and 稲庭中華そば This time, I ordered 喜多方らーめん ◇As expected, this group's biggest draw is these soft, springy, chewy noodles. They're really delicious. The broth, of course, also matches well and tastes great. I think it's a highly accomplished, high-quality bowl.
