喜屋製麺 in the 新井薬師 shopping street makes and sells fresh noodles. The owner is friendly, and you can buy various fresh noodles, including hiyamugi and udon. They also have yakisoba noodles that are somewhat like dried noodles, and sell soup and other items in small portions, so why not ask them about anything noodle-related? The hiyamugi was very delicious!

A noodle maker that makes everything without additives. Soba, udon, Chinese noodles, yakisoba, pasta (fettuccine)—it's all delicious. The ingredients are very simple. For example, the yakisoba has just 3: wheat flour, kansui, and salt. Compared with supermarket yakisoba, it's surprising how few ingredients there are. Every single one is truly delicious. The fresh pasta takes about 7 minutes to boil.

I've been a customer for a long time. I buy noodles for yakisoba. Unlike supermarket noodles, these have a firm texture and are delicious❕️

Fettuccine They said it keeps for 2–3 days because they don't use additives such as preservatives. I decided it was best to eat it the same day. I was told to boil it for about 7 minutes, so I cooked it for 6 minutes and had it with a bacon cream sauce. It's chewy and goes very well with cream sauce. Rather than using a store-bought ready-made sauce, I cut thick bacon into batons and sautéed it in olive oil, added white wine and cooked off the alcohol, then added plenty of fresh cream and seasoned with salt. I added the cooked pasta, tossed it thoroughly, plated it, and finished with coarsely ground black pepper. I used bacon this time, but slightly thick loin ham should be delicious too.
