A Miso Masterclass near Fussa! If you are in the Mizuho area, you have to stop by Kuradashi Miso ! You can’t miss it - the building features a massive, traditional miso barrel integrated right into the architecture, which perfectly reinforces their theme that "miso is a Japanese treasure". The Story & The Soup: This isn't your average ramen shop; they are a specialty house dedicated exclusively to miso. They treat miso as a health food, emphasizing its benefits for digestion and well-being. What makes them unique is that they offer three distinct regional soup bases: Hokkaido Miso: A strong, "salty" red miso. Shinshu Miso: A medium-bodied, slightly sweet "tan" miso. Edo-mae Miso: A sweet, creamy white miso (usually served with the large seaweed garnish). The "Secret" Pork: I ordered the Hokkaido Miso Marinated Grilled Chashu-men, which comes with three thick slices of pork and no seaweed. The pork here is the star. It is miso-marinated and flame-grilled (Aburi). This process creates a caramelized, smoky crust that is totally different from the standard boiled chashu you find elsewhere. It has a rich, deep flavor that pairs perfectly with the dark red miso broth. The Appetizer: Don't skip the Shinshu Miso Grilled Chashu with a mound of Green Onion. It’s served over a bed of fresh bean sprouts and shredded cabbage. The stuff underneath stays crunchy and provides a great contrast to the savory, seared meat. There is a tablet-style ordering system with great photos, making it very easy to navigate even if you don't read Japanese. Highly recommended for anyone looking for an authentic, specialized ramen experience! Cash only! Or Pay Pay!
View on GoogleFavorite ramen I think I’ve ever had. Spicy miso was phenomenal.
View on GoogleIve had some pretty good Miso ramen in my times in Japan. But this might be the best with no exaggeration. Had a few reviews that made me skeptical. But no Im completely agreed, this is amazing Ramen. They earned that Star and deserve a lot of credit. EVERYTHING we ordered was well prepared and delicious. My only gripe was being unable to stop eating when full. Yes it was that good. I hand out many 5 star reviews, but I also leave negative points in my review because rarely is something perfect, but I dont try to deny the 5. This place WOULD HAVE earned my PERFECT stamp of approval. BUT my serious gripe is The Beatles Music. Holy crap Japan, GET OVER THE BEATLES. THERE ARE OTHER GOOD BANDS FROM THEIR ERA. I HEARD HEY JUDE ENTIRELY TOO MUCH THIS TRIP. Excited to return again soon, but if you can drop the music like Lennon, it’ll be a PERFECT score.
View on GoogleOutstanding service, bowls packed to the brim, the fire grilled pork tenderloin is like nothing I've ever had and the flavors are astonishing. Best Ramen around Fussa!
View on GoogleMichelin recommended ramen near Yokota AFB. Service was excellent, prompt, and polite. We were provided an english menu without asking. I ordered roast pork miso ramen, and my wife ordered tantanmen. Both were quite good. The tantanmen was deliciously balanced with a lighter sesame flavor than others we have tried. The miso ramen was rich but not to fatty with a complex taste. The roast pork was sliced thick and charred to perfection, some of the best Ive tried. We also had the miso stir fried cabbage and gyoza, both were very good. The tangy miso dipping sauce served with the gyoza was incredible! They also sell it by the bottle.
