Soba in Tokyo I thought, “When in Tokyo, it should be soba,” so I decided to have some on my way back from a meeting. I’m originally from Fukuoka, where noodles usually mean ramen or udon, so I’ve always wanted to discover the appeal of soba. That’s why whenever I come to Tokyo, I make it a point to try soba. This time I had hot soba, and I found it fascinating how the broth is so different from udon or ramen. It was tasty, but since I don’t know what makes soba truly “good,” I can’t really tell the difference yet. Someday, I’d like someone to teach me the standard of what defines truly delicious soba.

Your typical fast food soba shop. The daily special included a hot/cold soba and your choice of a deep fried rice bowl at an unbelieve price point of 600yen! The ordering procedure is a bit complicated and inefficient (you may make several trips to the counter), with my biggest disappointment being that the deep fried shiitake was cold...
