View on GoogleOverall rating: ★★★★★ An outstanding Japanese restaurant representing Shimbashi, where you can savor meticulous craftsmanship and the changing seasons with all five senses. Every dish was uncompromising, and I spent a blissful time here. 【What was good】 ・Overwhelming food quality, from the perfectly cooked salt-grilled ayu to the refined, clean-tasting broth in the soup course. ・Perfect deliciousness without any shortcuts, right down to the pickles and small side dishes accompanying the final rice set. ・The beautifully chosen tableware enhances the dishes and delights the eyes too. ・The chef's refined, graceful movements and the comfortable level of attentiveness in the service. 【Points to note】 ・As it is reservation-only and extremely popular, planning and booking several months ahead is essential. 【Visiting advice】 Highly recommended for important occasions where everything needs to go right, such as client entertaining, special anniversaries, or an adult dinner spent slowly savoring authentic Japanese cuisine. An exceptional restaurant worthy of investing in yourself as an adult.
View on GoogleVisited the renowned Japanese restaurant 「新ばし 笹田」 in the Shimbashi–Toranomon area. Known for being difficult to book, this restaurant offers delicate Japanese cuisine that makes the most of seasonal ingredients. That day, I had salt-grilled wild ayu at the peak of its season. Carefully grilled over charcoal, the ayu had fragrant skin and plump, tender flesh. A subtle bitterness and refined umami spread across the palate, offering a full taste of summer. Precisely because it is simply grilled with salt, the quality of the ingredients and the chef’s mastery of heat really shine. A renowned restaurant where you can slowly savor Japanese cuisine that treasures each season’s finest ingredients in a tranquil setting.
View on GoogleI went to 「新ばし笹田」! It was truly wonderful. The restaurant is in Toranomon, with an understated exterior, and the moment I stepped inside I was enveloped in a quiet Japanese atmosphere. Chef Sasada was behind the counter, and his courteous, gentle manner really stood out! The food really made me think, so this is what it means to bring ingredients to life. Every seasonal soup dish and sashimi course was delicate in both flavor and appearance, and I was constantly impressed. Nothing flashy, but every dish had a flavor that truly stayed with me! And the clay-pot rice at the end was just amazing. They cook Uonuma-grown Koshihikari separately for each party, and it was fluffy, glossy, and so delicious it hardly needed any side dishes. The portion was just right, too—perfect right to the end! I’d love to return for a special occasion!
