らーめん バリ男 新橋本店Ramen BARIO Shimbashi Main Store
バリ男's “commitment” We want to make ramen with heart. We want you to eat ramen made with true dedication and feel that passion. By continuing to uphold that dedication, “pride” as craftspeople is born. The バリ男 team makes ramen every day with that spirit. 【Broth】 Using the Kurume ramen technique called yobimodoshi, this broth, the “life” of バリ男, has been continuously replenished and preserved since we first opened. Made by simmering large quantities of carefully selected pork bones alone, it is a powerful, rich tonkotsu broth with a creamy taste. The mellow yet sharp flavor of soy sauce and the sweetness of pork back fat blend into it, バ…

I'm not sure what's going on with Google reviews but all the 4.2+ star ramen shops have been a let down so far. So I gave this 3.8 star shop a try and it ended up being one of the highlights of this trip. To be fair, I've never had Jiro ramen so I can't compare. But the first sip of the broth packed a huge punch. It needed no adjustments (seriously, don't even add garlic, I added two spoonfuls and it nearly ruined the broth). Noodles were great, pork was sloppy but very flavorful and thick. Egg interestingly had slight hint of a birthday cake vanilla taste to it but it worked fine in this bowl. I got the small bowl and it was loaded as if I ordered a medium.
View on GoogleMy first Jiro style ramen. This is a meal made by pork lovers for pork lovers. Portions are large - the regular is 200g of noodles. Noodle texture is on the thick and chewy side, which I enjoy. Despite looking heavy and oily, the broth is surprisingly drinkable. Condiments such as pepper, chili flakes, vinegar are provided to spice up your meal. The shop is a very authentic ramen shop with seating around the bar. Ordering is via vending machine. English menu is available and a staff member will show you which button to press. After your meal, put your bowl back on the counter and wipe down your eating area with the provided tablecloth. Delicious, efficient, satisfying. I will be back!
View on GoogleLove this place. Last time I ate this was more than 10 years ago when they had a store in Singapore and was disappointed when they left but it’s great to be able to find them in Tokyo at their original shop! Food was great and taste has not changed! Soup is thick, meat melts in your mouth, and noodles are hard and chewy. You can also add garlic (free flow) and chilli powder to enhance the experience. The portion is also huge so starve yourself before you go! Price is <1000¥ in general and so definitely worth the money. Overall would recommend!
View on GoogleBario is one of my favorite jiro-style bowls in Tokyo. Heavy broth, packed with pork flavour and loaded with flakey rendered pig back fat. Noodles are chunky and chewy, allowing a great slurp. Chashu is tender and fragrant, as is the side order of ajitama (egg). Come very hungry, or order the smaller, 200g portion of noodles instead of the regular 300g. Also, no queue most of times.
View on GoogleWhat an amazing experience. The ramen 🍜 here is just incredible. The whole experience sitting at the counter and watching the makings of the dish is well worth it. The broth, chashu and thick noodles together are just addictive. I felt like I blacked out and went to ramen heaven.
