Opened on October 4, 2019, in an alley entering from Shimbashi Karasumori Street. The yellow sign board with "Niigata-originated Naoji Shimbashi Store Chuka Soba" written on it is clearly visible even from far away in the alley. There seem to be several types of Niigata ramen, but this seems to be a Tsubame-Sanjo style back fat chuka ramen shop. The menu is pasted on an A-type board in front of the store, and numbers are written on each product image on the menu. Next to it is an outdoor ticket vending machine. Only numbers are written on the buttons, and not even the price is written. Menu selection and use of the ticket vending machine seem to require a little getting used to. Ramen menu is divided into three types: back fat chuka, niboshi soy sauce, and without soup. Among the main back fat chuka, "Back Fat Chuka Soba Flavored Egg" is 850 yen. Large portion of noodles is +100 yen and extra large portion is +150 yen. "Back Fat Chuka Soba Flavored Egg" has bacon-like pork belly char siu lined up on the noodles, and it looks voluminous. Coarsely chopped onions whet the appetite. Back fat floats in the soup, but the greasy feeling is not strong. If you drink it, it's surprisingly refreshing. The soy sauce is also not too strong, and it's a soup that you can drink until the end. The noodles are said to be homemade. It is a thick noodle with a slight curl with a strong yellow color, and it has chewiness and is satisfying to eat. It was an interesting noodle with a texture I have never experienced elsewhere. It is said that thin noodles are used for niboshi soy sauce.

It is a back fat tonkotsu chuka soba which is my favorite ramen, and there are a lot of bean sprouts in it, and I was happy that there were bean sprouts before reaching the noodles, and the char siu was also soft and delicious, but there was a question from the staff whether to put garlic or not, and when I confirmed to put it in again, when I ate it, it was not in, and as a garlic lover, it was disappointing. After that, people who looked like office workers nearby came in one after another and almost everyone did not put garlic, so I thought maybe they forgot to put it in that flow? As a garlic lover, I would like to eat it again if there is an opportunity. Lunch was also 1000 yen for ramen and half fried rice, which felt cheap and profitable. However, there is only one entrance, and in terms of new coronavirus ventilation, the door is not always open, so it might be a little cold about 5 cm, but it felt good if it was opened a little with a door stopper.

When I am in my late 50s, I have been avoiding oils from the beginning. This Niigata Sanjo ramen was a bowl that I could enjoy even for me. Straight thick noodles go well with the soup that has a niboshi flavor. Back fat provides mildness rather than greasy. I ordered additional onions, and this goes well. But I wonder if it smelled on the train.

Series of shops that made me curious ^ ^ This time Naoji-san ^ ^ Because it is Niigata ramen, I thought it was the Aoshima Shokudo system in Akihabara that I love, so I came to the store! Is this new because there are no reviews yet? While getting lost, I ordered seafood soy sauce ramen with flavored egg 750 yen. Because it was an awkward time, I was alone in the store. After a while, the bowl arrived ^ ^ Beautiful form❗️ First from the soup ~ I feel the seafood is a bit weak. This is completely different from Aoshima Shokudo. Even with Niigata ramen🍜, it is so different. And thinly sliced char siu. And flavored egg. And long menma. I feel the amount of noodles is also small. If you are hungry, I think it will be a little unsatisfactory. Well, about 80% stomach is just right to work hard ^ ^ And eating finished ^ ^ Thank you for the meal. Shimbashi is a lunch battle zone like ramen. Tanise-ya-san and Mato-san that I love, etc... Please do your best from now on ^ ^ Well, I will go to work❗️

Niigata soy sauce ramen. Back fat also has no habit, and it is a bowl that is relatively refreshing and easy to eat. Rock seaweed and onion toppings are soy sauce ramen that goes perfectly. The noodles are thick and absorb the flavor of the soup, so it's delicious. It is not a ramen with special impact, but it is put together and has a high degree of perfection. Personally, I prefer junkier Niigata soy sauce ramen, but since it is a rare soy sauce ramen in Shimbashi, I recommend it to those who are looking for it in Shimbashi.
