The difference between 'Ramen Shop' and 'New Ramen Shop' Put simply, neither is a 'headquarters-operated chain store'; both are loose communities based on the norenwake system, which is similar to franchising. Within this system, 'New Ramen Shop' is a group that branched off from 'Ramen Shop'. To oversimplify: Ramen Shop (red signboard) = original New Ramen Shop (derived branch) = independent chain operating under a separate franchise Characteristics of the original Ramen Shop: - A headquarters exists, but it operates as a loose franchise. - Shared supply routes and a unified red signboard design Signature dishes: - Negiramen (green onion ramen) - Negichashu (green onion pork chashu) Flavour profile: Based on the Ike-style tonkotsu shōyu (pork bone soy sauce) broth, but lighter than the Ike-style. - Significant variation in flavour between shops and regions. - Key points: - The Ramen Shop expanded rapidly in the 1980s, becoming a 'legendary chain with red signs' nationwide. Characteristics of the New Ramen Shop (Derivative Branch): - Separate organisations established by owners who left Ramen Shop. Though named 'New', the basic flavour remains identical to that of the original Ramen Shop's tonkotsu shoyu + negi ramen. However, their suppliers and headquarters-level rules differ. - The signboard designs are similar yet subtly varied, with variations such as 'New', 'Original House' and 'Founder', etc., per shop. Key points: - Under the 'loose control' of the original Ramen Shop, the separate organisations rose unnoticed and established their own distinct positions. They are not rivals, nor are they a 'proper chain with a headquarters'; they are, so to speak, 'relatives within the Ramen Shop cultural sphere'. This explains the similar feel of their signage. Legally, they are entirely separate establishments, but from the customer's perspective, they appear indistinguishable. Flavour differences In truth, the identity of the shop owner and where they trained has a greater impact on the flavour than the differences between these two. Even within the same ramen shop system: Rich and creamy Strong emulsification Clean soy sauce flavour Sweet onion sauce type The differences are stark, such as whether the noodles are coarse and chewy or smooth and slippery.

The negiramen makes an impressive sight with finely shredded green onions filling the bowl, and the first bite brings that familiar Rasho comfort. The onions’ crunch and sharpness go well with the rich pork-back-fat broth, making it easier to finish than it looks. I went with a friend for lunch on a weekday, and it was just right for an unpretentious, hearty meal. The nori and wakame were quietly good too, with a simple yet strangely memorable flavor that made for a very satisfying lunch. I can see myself suddenly craving it again.

This Ramen Shop has a line at peak times💡Ramen Shop seems to have a lot of depth, including various lineages, but I am not really the type who knows much about that. Still, I thought this Ramen Shop was nice😊The staff’s instructions were clear and polite, and I had no complaints about the service. The amount of green onion in the negiramen was generous too😊One thing: I would appreciate a little more attention to the climate control and drinking water. I know temperature control is tricky this time of year, but personally, I think the water can always be ice-cold. I understand some people prefer room-temperature water, so perhaps it comes down to taste💡

【Visited 2026.5】 I arrived a little after 10 in the morning on Saturday. A parking space happened to be available, and there was no line, so I got in right away. But! All the chashu ramen varieties were already sold out! Selling out this early really shows how popular they are. So I ordered negiramen. It was topped with lots of green onions dressed in sesame oil. Irresistible for green onion lovers. The ramen had a deeply comforting flavor and was delicious too. There were blocks of chashu in it. They were so tender and delicious〜. I understood why it is popular. Next time, I want to have chashu ramen. It was delicious. Thank you for the meal.
