Ichiba Sushi
Market-driven sushi offered in a contemporary, all-wood eatery with a wraparound bar.
Is particular about tuna. Almost every part of the hugely popular tuna can be eaten, but not many restaurants serve the whole fish. For example, at Ichiba Sushi, which handles fresh tuna, you can enjoy the kama around the neck, which spoils easily, as well as the rare noten (top of the head). We also recommend the anago shirani (simmered conger eel), cooked until soft and fluffy. Ichiba Sushi has a deep passion for Tuna.

One of the best sushi we've ever had. The quality, flavor, and preparation were top-notch. Plus, the service was incredibly friendly. We highly recommend it! We already miss that taste :)
View on GoogleA Must-Try for the Ultimate Tokyo Fish Market Experience If you're looking for an unforgettable sushi experience in Tokyo, look no further than Ichiba Sushi (市場鮨), located in the bustling fish market (now primarily at Toyosu). This isn't your typical sushi restaurant; it’s an intimate counter experience where the focus is entirely on a small, hyper-curated selection of plates, showcasing the absolute pinnacle of freshness and craftsmanship. What sets Ichiba Sushi apart is its commitment to quality over quantity. The menu is intentionally limited, but every single piece of sushi is a masterwork. The chef's selection, or omakase, is highly recommended for a truly unique dining journey. You'll be served meticulously prepared pieces using fish sourced directly from the day's early morning auction, guaranteeing unparalleled freshness. From the perfectly textured shari (sushi rice) to the expertly sliced neta (topping), each bite is a revelation. The focus on a few spectacular dishes means the chef's attention to detail is absolute. They are particularly renowned for their dedication to tuna, often offering rare, melt-in-your-mouth cuts that you simply won't find elsewhere. The atmosphere is simple, focused, and authentically Japanese—exactly what you want right inside the market. It's a true culinary pilgrimage. If you appreciate the artistry of sushi and want to taste the best of what Tokyo's fish market has to offer, Ichiba Sushi is a truly unique, must-try experience. Be sure to get there early!
View on GoogleI had an awesome Omakase experience in this restaurant. The space is cozy and clean, and food is amazing. I would return in a next Tokyo visit for sure!
View on GoogleWe came to Toyosu Market first time yesterday morning, by serendipity saw Ichiba Sushi and entered. We ordered the Nigiri Chef’s Selection, turned out both the place and the order were perfect! All sushi’s are so fresh and delicious, with its unique texture and flavor with its aura of the freshness and they just melt in your mouth. We came from Vancouver, Canada, where we have lots of good Japanese restaurants, but this experience is just so different. The Nigiri sushi at Toyosu Market is fresher and price so much more affordable.
View on GoogleCame in here early in the morning before heading to our TeamLabs reservation. This was the only place in the market where a lady was inviting passersby inside (which through us off at first, since it made it seem like a tourist trap). However, we did come in and so glad we did. We got a tuna donburi and their sushi. Everything was prepared right in front of you, and the order came out quickly. The portion sizes were generous and everything was really fresh. We did love the grilled tuna, which was so juicy and had a fantastic condiment. Would love to visit them again.
