Unforgettable Soy Sauce Ramen Experience: A True Game Changer!" 🌟🌟🌟🌟🌟 Prepare for the best soy sauce ramen of your life at this incredible spot! For those craving something different from the usual pork or miso-based soups, this is an absolute must-try. The soy sauce-based soup is mouthwateringly delicious, and the other dry fish soup base option for an extra flavor kick takes it to another level. The noodles are perfectly suited to the soup, and the spicy preserved vegetables will delight heat-seekers – just be warned, they pack a spicier punch than they appear! This ramen is worth going out of your way for; don't miss out on this 5/5 star experience. Highly recommended!

Decent soy based ramen. More on the salty side though, not the usual lighter soy based broth. Not too bad for a “pass-by” visit.

A ramen made with care despite its tough-guy vibe. Gyogun Niboshi Chuka Soba 1250 yen, seasoned egg 150 yen. Thick, cloudy, niboshi-packed, with a bitterness that hits hard but doesn't feel unpleasant. Maybe it's the sharpness of the soy tare — strangely, I kept gulping it down along with the green onions, which have just the right size and crunch. The medium-thick flat noodles are piping hot and just right. The chashu, with its sinew cut, has a good balance of meatiness and tenderness. Yes, balance — looking at the seasoned egg with its decorative cuts, it started to seem like a ramen where everything was carefully calculated and arranged. Aedama 400 yen, chose crab miso. A full bowl's worth of thin noodles with plenty of oily tare and crab miso — this nearly-fifty guy flinches, worried about finishing it. Then I eat it and, huh, nothing funky. Feels like there could be a pasta like this, it goes down smoothly. The dipping soup is good too. Wednesday 18:38, counter of 7 seats, 2 customers ahead. The kettle is sweating buckets — the shop's hot too, huh. I'm probably more into the regular chuka soba, I think, but when there's a twice-a-week limited menu, I can't help but pick it. Still, it was a good encounter.

Arrived Saturday 19:43. A short wait to buy a meal ticket. After about 2 minutes, went inside. Bought Niku Niboshi Chuka Soba 1550 yen at the ticket machine on the right as you enter. 5 customers ahead, 3 waiting to be served. On the table: disposable chopsticks, renge spoons, toothpicks, cups, and black pepper. On the counter there's water in a kettle. Inside: 7 counter seats Staff: 2 BGM: pretty old Japanese music was playing. The bowl arrived 18 minutes after sitting down. They cooked 3 servings at a time. A sip of the soup. A fairly rich niboshi broth. No harshness or bitterness. An easy-to-drink soup where the niboshi isn't too strong. The soy sauce is Nihonichi Shoyu, a mellow soy sauce with just about no acidity. The noodles are medium-thin, flat, and straight. Crisp to the bite, you could slurp them forever. Chashu: 6 large slices and 2 smaller ones. Pork shoulder, slightly firm with a fragrant surface. The seasoning is subtle, but the meat itself tastes very good. Delicious with every chew. Mitsuba, I think — fragrant and crunchy. Love it. The menma are black, flat, thin slices. Crunchy texture with an oily flavor. Fairly strong seasoning. No sourness. Careful cooking, and the service was very good too. My impression is that serving takes a bit of time. I was seen off with a lovely smile. I'll come again. Thank you for the meal.

我的中華そば 机上の空論. Higashi-Jujo Ginza Street. It runs in a straight line from the north exit of Higashi-Jujo Station, cutting all the way through to National Route 122. It was around 12:00. No line in front of the shop, so I went straight in. The menu has chuka soba, gyogun niboshi soba, miso ramen, and more. I decided on the seasoned egg chuka soba. The BGM in the shop was mostly rock, and together with the shop's name, there's a rock 'n' roll vibe. When I looked it up, it seems there's some rock 'n' roll respect toward Nihonichi Shoyu and the noodle maker. I'm not a so-called ramen otaku who knows a lot about this stuff, but for enthusiasts this might be mouthwatering info. Looking it up made a lot of things click, so if you're curious, definitely do. Orders were piling up, so the bowl arrived after a little over 10 minutes. The jagged-heart seasoned egg is cute. Right away, a sip of the soup. The umami hits big — lots of oil, and an overwhelming chicken pressure that's mild yet makes you go 'rich, so rich.' Insanely delicious. It's a clear broth so it's clean, but the punch of the soy sauce's sweetness and aroma is tremendous — a strange sensation of being the gentle, soothing type yet strongly flavored. Gentle yet wild. A paradoxical flavor. The noodles are slippery, slightly flat, straight noodles. Simply outstanding with the soup — a pleasure to slurp, and perfect at carrying the soup. They look like simple noodles, but their unity with the soup is wonderful. The seasoned egg is wonderfully soaked and slightly sweet, the chashu is meaty, and the nostalgic feel — from the green onion floating in the soup to the menma, nori, and naruto — is very much my taste too. A chuka soba that doesn't stay mere armchair theory, but seems born purely from a quest with oneself. If I had to categorize it, maybe it's neo-nostalgic chuka soba, but it definitely felt like a one-of-a-kind 'my very own chuka soba.' I'll come again. Well then, thank you for the meal. It was very delicious.
