Beneath the flicker of a modest noren in Jūjō, I ordered a simple shoyu ramen, asking quietly for thin noodles—something delicate to dance with the broth 🍜🐾. Yet what arrived carried a different rhythm: the noodles, thicker and proudly chewy, held their ground with each bite. They spoke louder than the soup, their firm texture overtaking the gentle soy notes that should have lingered. It’s not a flaw, perhaps, but a mismatch of expectation and craft. Here, the kitchen seems to favor noodles with presence—elastic, resilient, almost stubborn. If you visit, be mindful: even “thin” may lean toward a heartier chew. For those who love texture, it’s a hidden delight; for those seeking balance, it may feel like the broth’s quiet voice is lost in the noise 🌧️

A rare ramen shop in Kita-ku that opens early. Nice decent tsukemen with noodles of different textures

Around Jujo, this is a popular ramen shop after 流, but unlike 流, it rarely has a queue. Most limited-edition noodles cost over a thousand yen, but the regular menu still comes in just under a thousand. The tsukemen had little dipping broth and lacked impact, but the shoyu ramen was excellent, with a pronounced savory broth flavor. However, as other reviews mention, the staff are gloomy… Expressionless both when you enter and leave, with voices barely audible. That’s fine if you’re only there to eat and leave, but I would have liked a slightly more pleasant meal, so I don’t think I’ll make a point of returning.
