Best ramen, especially miso on holidays and Sundays. Menu only in Japanese though.

I ordered set B, which includes soy sauce ramen with pork back fat and a seasoned egg, plus 2 boiled gyoza. Fine bits of back fat covered the surface, but the fattiness didn't dominate. The sweetness and richness of the fat blended nicely with the umami of the soy sauce broth. What stood out was that neither flavor overpowered the other, and I could appreciate both. The broth clung well to the 浅草開化楼 noodles, while the bean sprouts' texture and green onions' aroma added nice accents. The seasoned egg had a runny, soft-cooked yolk that paired well with the back-fat soy sauce broth. The interior had calm counter seating and felt welcoming for solo diners. The owner was polite and kind, and I appreciated his wife's thoughtful gesture of serving tea after the meal.

Ordered the back-fat chashu soy sauce ramen. The little bit of charred green onion suggests the ちゃぶ屋 lineage. The back-fat broth with bean sprouts, white leek, and wakegi has a nostalgic feel. The noodles are boiled in a basket and drained with a flat strainer, but they're clumped together. He probably can't see them because of age-related farsightedness. A small serving of rooibos tea came after the meal; nicely refreshing. It was a quiet, evocative space with few customers, but ロケットナウ orders were pouring in. The owner seems rather temperamental, but he's evolving with the times.

I felt bad dropping in at that awkward time just before closing. There were 3 people inside, including me. The owner apparently trained at a popular ramen shop, which naturally raised my expectations. The interior was clean and made a good impression. There are several options, but I chose the soy sauce ramen, which seemed to be the main offering, and added a seasoned egg. The aedama caught my interest too, but I decided to try the ramen first. The soy sauce ramen was delicious. The clean broth had no distracting flavors, and the soy sauce aroma was irresistible. It's a very polished bowl. Everything was well balanced, and the noodles were good too. They also have salt, miso, and mazesoba, all of which really, really interest me. I'll go again. The person who seemed to be the owner had a craftsman's air about him, which left a good impression. A recommended restaurant.

I entered right when they opened and ordered the 2nd-generation A set. The back-fat soy sauce ramen arrived 15 minutes after ordering. When I was nearly finished with the ramen (perhaps after twenty-something minutes?), the ultimate raw egg over rice arrived. It's a set, yet the dishes don't arrive together. What's more, they'd just opened and there was only 1 other customer. Isn't an operation this poor a fatal flaw,,,?
