In love with the food and great chefs
View on GoogleVisited 「鮨 まつ本」 in 板橋. It was a succession of truly wonderful sushi from start to finish, but the 「ネギトロ巻き」 near the end of the course especially blew me away! The appearance alone was surprising, with an astonishing ratio of "9 parts negitoro to 1 part sushi rice." The moment it entered my mouth, the tuna's high-quality fat and savory flavor spread in a rich, silky wave, literally melting away in an instant. The balance of crisp, fragrant nori and just a little sushi rice was perfect, and it was so delicious I was lost for words. A special, outstanding restaurant where you can take your time enjoying wonderful sushi filled with the chef's dedication in a calm setting. That moving negitoro roll is something every sushi lover should experience at least once. Thank you for the meal!
View on GoogleVisited 鮨 まつ本 near 新板橋駅. A place to properly enjoy sushi in the 板橋 area. The counter has a calm, comfortable atmosphere too. From the small dishes to the nigiri, every item is high quality, and satisfaction steadily builds as the meal progresses. The nigiri is delicious, with a good balance between the toppings and sushi rice. A sushi restaurant that carefully serves delicious food rather than relying on flashiness. Different from the famous restaurants in central Tokyo, and it's lovely to have sushi of this caliber in 板橋. A place I'd like to revisit when I want to enjoy sushi in peace. Thank you for the meal.
View on GoogleMy first visit to a sushi restaurant I've heard many good things about. It's in 板橋, an area I don't visit often. The counter was full, and the chef served us with a smile. The つや姫 sushi rice was just to my taste in both firmness and size, and the many dishes left me very satisfied. You can also drink plenty of unusual sake from different regions. Even so, the bill was about half that of high-end Tokyo restaurants these days. ◯noresore ◎scallop ◎straw-grilled 鰆 ◎scallop milt ◎塩釜 tuna chutoro ◎homemade ホタルイカ沖漬け ◎銚子 kinmedai ◎mehikari marinated in Saikyo miso ◎yariika ◯fried roe-bearing kombu ◯ark shell ◎torigai ◯charcoal-grilled firefly squid ◎aji ◎nodoguro ◎kohada ◎sardine ◯wasabi stems ◎akami ◯tai ◎kuruma prawn ◎uni ◎torotaku ◯anago ◯kanpyo roll ◯egg ◯hojicha mousse
View on GoogleA sushi restaurant within walking distance of 新板橋駅. It's a small space with 8 seats, bringing you close to the friendly chef. Despite being in an area I wouldn't normally visit for food, reservations are extremely hard to get. And no wonder. You can enjoy high-quality sushi ingredients and a variety of local sake, at a very reasonable price of 2.5万. The final negitoro roll was amusing because it was almost all negitoro, and it was incredibly substantial and delicious. It would have been even better if additional orders were possible. It's a little far from home, but I'd like to return if I get the chance. ◆chawanmushi ◆shirauo ◆roe-bearing kombu: ◇chutoro: delicious, acidity, ◆sake-steamed tachiuo: simple ◇hirame: refreshing wasabi, aged tenderness and savoriness ◆negima ◇sumiika: no crisp bite, good salt level, sudachi ◆squid tentacles・Saikyo marinade with sansho: ◇ark shell: kombu, Yuriage ◇ankimo: smooth, naturally sweet, ◇aji ◆unagi grilled without sauce ◇kohada: fatty, soft, substantial, good ◇shirako ◇kuromutsu ◇zuke ◇kuruma prawn: half-raw, springy, fu ◇uni ◇negitoro roll ◇anago ◆miso soup ◇kanpyo ◇egg ◆hojicha mousse
