⑴Peace of mind, safety, health. We use carefully selected flour and adjust the water and salt amounts to suit the climate so that you can enjoy udon with the ideal firmness. We make healthy, delicious original udon. All our dashi and tsuyu are also made in-house with quality control. ⑵Local production for local consumption, premium shochu and sake. We source seasonal vegetables locally in Hino City to serve fresh tempura. Our alcoholic drinks and premium shochu are hard to find at other shops… And we offer them at exceptionally low prices (so we can't advertise them too much。。). ⑶Cultural experiences, tourism, interaction across nationalities. We're a small, community-focused shop, but guests visit us from countries all over the world…

In 2018 we were on vacation in Hino. We had tried to have an AirBNB experience, but the cook was out of the country at the time of our vacation, however, he had his father pick us up at the train station one afternoon and we spent the day with him while he shopped at a Spirit Store before cooking for the evening meals at the Restaurant. We enjoyed the food, the atmosphere, and the element of the little udon Shop so much, we have always thought fondly of the place and the people. The father showed us his little restaurant and tried to explain everything, and answer our questions, even with the language barrier between us. We met a small family while there and the little boy learned quickly how to take his photo with my phone, we have several pictures of the young boy and his parents we look at and remember with fondness (we would love to see them again). We never did meet the owner's son (who was going to teach us how to make Udon noodles), but we had a wonderful time with his father and the restaurant.

By far, this is the best udon I've had in Japan. Real authentic place where they hand make the udon noodles, and the staff and owner are amazing people. The beef sukiyaki udon was amazing and really, really tasty. 15 stars for this place! ^^

Really good Dashi Udon place. Noodle is also Tsurutsuru Shikoshiko. (Sorry I can't explain in English but very good noodle.) You can't eat this noodle any other place. Bacause the shopkeeper makes noodles with his hands in the shop. So you can see he makes udon. (The workplace is glassed). Like Udon making show. I like Dontakutoji Udon the best. I also like Anago Don. Price is about $7 each. If you're western people I think you feel it's very cheap. (1USD=130JPY) If you want to eat good Japanese food, I can recommend with guarantees :) You can also enjoy it as a Izakaya. Various Sake and Otsumami (appetizers) are served.
