勝来軒@Hamura Gyoza set ¥1300 A long-established neighborhood Chinese restaurant in Hamura run by an owner who trained at Eifukucho Taishoken❗️ I intended to order chukamen (ramen here), but I was curious about the gyoza too, so I ordered the set with gyoza, small rice, and small ramen. The gyoza set arrived on a tray, and the small ramen was the size of a typical regular ramen❗️ The gyoza had crisp browned bottoms and chewy wrappers. The filling has a slight tang, so soy sauce and chili oil seemed a better match than vinegar and pepper. The ramen had pale amber broth with medium-thin, slightly wavy noodles from 草村商店. The broth was light, with restrained niboshi and kaeshi flavors, but together with the softly cooked noodles, it had a simple, somehow comforting taste. Maybe I'll try the tanmen or something next time... thanks for the meal♪

I'd been curious about this place for ages, so I went at 11 on Saturday. Already almost full! As I hesitated outside, the lady inside waved me in. The counter was already full, so even though I was alone, I was shown to a table. I looked at the menu for a while and ordered the fried rice set. It arrived. What an irresistible sight. Tried the ramen. Whoa—delicious! Too delicious! So many toppings! Menma, chashu, ajitama, all delicious! The broth is better than 大勝◯! That one gets tiresome, but this one doesn't at all, right to the end! The fried rice... the absolute & best. Moist, well seasoned, with onions ⇦ their sweetness is delicious! The squishy texture of the naruto is good too! I should have come sooner. A treasure of Hamura. After that, I alternated between the fried rice set and stir-fried meat set, but today the miso ramen the person next to me was eating looked incredibly good, so I tried the meat miso ramen. When it arrived, it looked seriously delicious! Onions, carrots, and snow peas provide plenty of vegetable sweetness. Lots of small pork pieces too, pairing beautifully with the rich, garlicky miso broth—delicious! The noodles seemed different from the soy sauce ramen, thinner and firmer, and delicious as well. Unless you say otherwise, this restaurant basically serves large portions, but I finished the whole thing in one go without getting tired of the flavor. Wow, seriously good. Personally, nearby places I like for miso include 味源 in Kabe and 壱発 in Fussa, but this resembles neither. Reaching back into distant taste memories, perhaps it's like a richer version of どさん子 or 天芯ラーメン. Now I'll have even more trouble deciding what to order for a while. What a wicked couple, haha. July 2023, this year is hot again, far too hot. I already get hot easily, and eating my beloved ramen makes sweat pour from every sweat gland in my body, which feels incredibly uncomfortable. That was the only thing I hated. Different ramen shops seem to have different views on room temperature. Especially since COVID, many places let outside air in through open ventilation windows, losing the air the AC worked to cool, and feel over 30℃. But 勝来軒 is different. Maybe about 5 horsepower? No, an even more powerful AC, airflow at MAX, freezing cold. Fantastic. If you get hot easily, I recommend the middle of the counter. The cool breeze pleasantly cools your overheated body. The other day, while I was eating, about 6 new customers arrived separately. The last one to order waited a little longer for their food and apparently got so cold they were trembling slightly, haha. Including things like that, it's a great restaurant.

Fried rice set, 1250円 including tax. Visited because of the high review ratings. First visit at 12:50, full. After eating, I don't understand why so many customers come or why the ratings are so high. Completely ordinary. The ramen noodles are on the thin side, flavorless and rather limp. The soy sauce-based broth had a slight kick, perhaps from a little pepper. Very mildly flavored, with nothing particularly standing out; although not oily, it wasn't light and refreshing either. The fried rice was well seasoned, and the onions still had some crunch. I'd say it was pretty good. It's molded before being plated, so it has a neat shape. There are about 6 counter seats and 3 tables seating 4 each.

I visited for the first time while shopping at a nearby supermarket. I ordered a large fried rice and gyoza. The fried rice was on the moist side, I suppose, nicely seasoned and delicious along with the accompanying soup. The gyoza were piping hot too, and biting into them released such juicy, savory flavor that I spontaneously said, ah, delicious... When paying, I asked whether the fried horse mackerel on the menu could be ordered on its own. They said they'd make it if I ordered it, so next time I might have fried rice and fried horse mackerel.

Hamura City, Tokyo. Established over 40 years ago. A Chinese restaurant loved by local residents. I ordered the classic combination of ramen and fried rice. The ramen is old-fashioned chuka soba. Generous portions and delicious. The fried rice is moist. It's quite busy at lunchtime and is run by an elderly couple.
