Soba noodle shop

Founded in 1964, we carefully select ingredients to aim for healthy food. Our soba mainly uses ingredients from Hokkaido, blended with other regions we are interested in. We use two manual stone mills to grind the soba kernels. We knead soba sprouts into that soba flour to provide highly nutritious soba rich in rutin. Our dashi also uses honkarebushi sourced from carefully selected regions, shaved in three different thicknesses to match the dipping sauce and seasoning. We are always striving to improve and refine, and we would be grateful if customers could feel the joy of food. Soba is a natural food that has remained unchanged since long ago. Soba shops, which are also a part of Japanese culture, have reached the present day by changing their form little by little, and will continue to change...

First visit!! Tsukishiya, which is also on the Tokyo map. This time I ordered the tanuki soba in a large portion 🙇‍♂️ Thank you for the meal 😋 Next time I want to try the wasabi bowl and jinenjo (wild yam) using ingredients from Tokyo 🗼

(Revisit) This time I chose the "Wasabi Gozen" because I wanted to enjoy both the delicious soba and the wasabi bowl that I couldn't try last time. I was told I could sit anywhere, but since I was shy and sat at a two-person table, the serving tray hung off the edge of the table. It was big, so I stood up to take a picture. There are wasabi leaves on the soba. The tempura has over 10 items and all of them are delicious. Even the shrimp tails are fried perfectly straight. The soba is made firm and boiled to perfection, a rich-tasting soba where you can feel the aroma of the grains. The dipping sauce is not too sweet, a sharp and irresistible sauce. On top of the well-cooked rice, there is plenty of freshly shaved bonito flakes, which are also used for the soba sauce. The wasabi is grated. It's delicious wasabi with sweetness from Okutama. Attention to the seven-layer bonito flakes. Because the bonito flakes are so effective, it's delicious with just a little soy sauce. Thank you for the meal. (First visit) The soba is delicious. It's cut thinly and is very rich in flavor, ah, I felt like I was eating grains. For the first time in a long while, I was deeply moved by how truly delicious the soba was. I had been curious about the "Wasabi Bowl" on the banner for a long time, and this time my wish finally came true. It seems the wasabi bowl couldn't be provided because the production area was hit by a flood and wasabi couldn't be shipped. Next time, I will definitely visit again to look forward to the wasabi bowl and delicious soba.

There are several parking spaces on the premises. The wasabi is famous, but as of April 2021, sales have been suspended. Honestly, the soba is average. The tempura is delicious. Since there is almost no difference between the half tendon and the regular tendon, it's better not to order anything other than the half tendon. The volume and the tempura served are almost the same, but the prices are too different. The large woman who handles the dining room and checkout had very poor customer service. She said the seats were already reserved, and even though there were 8 of us, she made us sit separately, and after we finished eating, the people who had reserved the seats didn't even show up. Also, she turned away new customers who came later, saying it was busy today and service would take a long time, but after that, she seated regular customers who came at almost the same time without turning them away. I was surprised that a business could get away with doing something like this. As for the smoking area, an ashtray was provided outside the entrance. For payment, it's good that electronic money payment is available.

Sohara is handmade soba, so the noodles are thin and chewy. It was past lunch time, but it was quite crowded. Since it was my first time here, I saw that everyone was ordering menus with tempura, so I ordered the tempura seiro soba. At other soba shops, the tempura is usually a small amount, but here there were several types of tempura. The tempura was crispy and the shrimp was quite large. The atmosphere in the shop was also good and the staff was kind. This is a shop I want to come back to.
