This is a famous Hachioji ramen restaurant, one of the local ramen restaurants. As the name suggests, it is located about 10 minutes from Hachioji Station. Hachioji ramen is a clear soup based on pork bones (chicken bones may be added depending on the restaurant), flavored with soy sauce, and made with medium-thick straight noodles. The toppings are basically simple, but the distinctive feature is the chopped raw onion. The restaurant's ramen also looks simple, but the soup is very flavorful, with a hint of sweetness, and many customers finish it off with a taste that lingers in the mouth. The chashu pork comes in two types, loin and belly, and both are tender and juicy, with a sweet fatty flavor that is also delicious. The seasoned egg is half-boiled and tender inside. Simple but well-balanced ramen. Since this is a popular restaurant, you may have to wait in line for a long time, so we recommend that you come early.
View on GoogleI was wondering why this shop had 4.3 on its rating and there was always a queue in front of the shop. So I ventured, left feeling not disappointed but also not overwhelmed. If you like Hakata 🍜 or Chinese style noodles it should be a 4 I guess otherwise mmm maybe 3.8 stars 3.9 at most.
View on GoogleVery famous Hachioji-ramen restaurant. So crowded, and opened in lunch time on weekdays.
View on GoogleRegular ramen I'd definitely keep coming back for if it were local A good balance of stock flavor and kaeshi A pleasant soup that feels right in your body. After you sit at the counter, they ask how firm you want the noodles, but since it was my first visit, I went with regular The medium-thin straight noodles seem low in hydration and have a clean bite They're aromatic and go very well with the soup. Thick, tender pork shoulder chashu So tasty it makes me want to try the pork belly too. Thinly sliced menma, dark, thoroughly seasoned, and on the soft side And finely chopped onion, characteristic of Hachioji. Within the ordinary sort of category, it has a balanced deliciousness that would probably bring me back weekly if it were local. Regular ramen ¥650- Location: about 5 minutes on foot from Hachioji Station
View on Googleタンタン@Hachioji ・Large mixed chashu ramen ¥1250 My first visit to “タンタン,” the pinnacle of Hachioji ramen❗️ Arrived at 10:00 on a weekday, 1 hour before opening, with 1 person already there. By 10:25, there were 7 behind me. Chairs are provided for about this many people, so waiting is comfortable. It probably varies by day, but you'll need to arrive earlier than this to get into the first seating. After 10:30, the line kept growing, exceeding 20 people by opening time. We were called in right on schedule at 11:00. Beautifully presented Hachioji ramen. The amber soup brings together pork umami and the richness of lard with a slightly tangy kaeshi for a fairly clean finish❗️ The noodles are medium-thin straight noodles from 田村製麺. Slightly low in hydration, with a distinctive snappy, almost popping bite. The loin chashu has a firm, meaty texture and slightly strong seasoning, while the belly chashu has just the right fat and a juicy flavor. Flavor-changing condiments included doubanjiang, grated garlic, white pepper, black pepper, and vinegar. I didn't try them all, but adding a little white pepper sharpens the flavor. The large serving of 1.5 portions of noodles is quite substantial, but I finished even the soup. Thanks for the meal♪
