Weekday, 11 a.m., visited right after opening 1 customer ahead of me Order Roasted aji niboshi shio 1400円 Soup From the first sip, finishing it all was a given Way too delicious! The niboshi and salt tare are in exquisite balance, bringing out the umami. Not overly gentle, a satisfying flavor! Noodles Low-hydration thin noodles with a snappy texture These are also cooked just perfectly Delicious Toppings Two slices of rare chashu, and chicken chashu Both carefully made, tender and easy to eat And above all, the daikon sitting enthroned in the center This is tasty too。。。 It's meant as a palate cleanser, but I couldn't stop eating, it's so well soaked in flavor! Overall A shop I truly love. You can eat a refined bowl in a calm atmosphere. The drawback is that since they're not on social media, you can't know the menu unless you go to the shop that day. It's empty right after opening, but since the city hall and such are nearby, I think it'll get crowded after 12.

Aji niboshi shio, thin noodles 950円 First visit. Arrived at 10:42 on a Saturday in October 2023; it was already open with 2 customers ahead. Bought a meal ticket at the machine to the right of the entrance and went to the seat I was shown. You can choose thin or hand-kneaded noodles; I went with the former. There was a notice of a price increase in November or December. It's a 2-person operation but only 1 cooks, so turnover doesn't seem great. Bowl arrived at 10:49. The soup is very clear, and the aroma of aji niboshi rises up. The surface doesn't look very fatty, but when you drink it, it's oily, or rather it gives a heavier impression than I expected. The umami has depth and it's very delicious. The saltiness is a bit strong. Quantity and temperature were fine. The noodles are straight thin noodles. A snappy finish that goes well with niboshi-style soup, and they pick up the soup well. Flavor is about average. The amount is a little under 150g before boiling. Chashu: 1 large and 2 small slices, shoulder loin maybe. Looks low-temperature cooked, but it's cooked through. The meat has solid flavor too. 4 pieces of menma, nicely firm and well seasoned. Red onion and small green onion add aroma and color. Finished it while changing up the flavor with pepper and niboshi vinegar. Until I left at 11:58 there was no wait, and it was about 80% full.

No wonder it's highly rated. It's delicious. Getting this flavor with almost no line is a real blessing. I had the niboshi white shoyu 1200円. Thin noodles, but they have quite a bit of bite. The soup is superb, and the chashu is very luxurious and good. I think of it as a Tantan you can eat without lining up, but it might actually be even more delicious.

7/3 Niboshi white shoyu 1200円 Conclusion: the soup is really good. Next time I'm nearby, I'll try the kombu-sui tsukemen A fair amount of noodles; thin but firm and filling. Good balance with the soup, and the white shoyu might go surprisingly well with pepper High-quality chashu using good meat, 2 slices. It also comes with an ajitama, so at first I thought 1200円 was pricey, but in the end it's worth it. Access is inconvenient, so on weekday afternoons you can get in without a line
