There is a delicious soba restaurant about a 10-minute walk from Nishi-Hachioji Station. After leaving the station, you enter a peaceful residential neighborhood, so it welcomes you in a quiet setting. Zabo. Apparently it means sitting quietly, leaving worldly matters behind, and becoming one with the Great Way. Just thinking of the stone-ground soba waiting for me is irresistible. There are only about 14–6 seats, so seating is limited and you may have to wait depending on the timing. It is nice that they have a waiting bench. When I visited after midday, I got in right away. The dishes served before soba at a good soba restaurant are delicious. Apparently, in the Edo period, soba dough was rolled out and boiled after an order was received. I want a little something to eat while waiting for it to be served. The soba gaki is exquisite. You can tell from its appearance that the grain is treasured and eaten as it is. Chewy and aromatic, the soba gaki is a dish worth ordering. The duck breast is another carefully prepared dish that values aroma. The soba, with its aroma and texture, is another dish that makes you glad you came. The final sweet is a good finish too

I had “天粗挽き” at “蕎麦 坐忘” ⭐︎ This historic restaurant, established in 1993, is in a quiet residential area about an 8-minute walk from Nishi-Hachioji Station, and its hideaway-like atmosphere was lovely too. 🥢 Carefully crafted coarsely ground soba First, the appearance of the coarsely ground soba, scattered with dark specks, raises expectations. In the mouth, it is chewy and firm, filling your mouth with a fragrant, toasty soba flavor. Apparently, it is made by combining unhulled buckwheat coarsely ground in a hand-operated stone mill with whole hulled buckwheat coarsely ground in an electric stone mill, allowing you to fully enjoy soba's natural deliciousness. It is delicious plain too! 🍤 Exquisite tempura that looks beautiful too The tempura is wonderful as well. The set includes shrimp kakiage and 3 types of vegetables, and the crisp coating brings out the ingredients' flavors to the fullest. The shrimp in particular are so springy! Delicious with salt or dipped in tempura sauce, and a perfect match for the soba. 🍵 Finishing up Fragrant soba tea was served after the meal, and finishing with thick, rich sobayu was lovely too. Finally, soba tea jelly is served. With its gentle soba aroma, this jelly slips down easily without guilt even when you are full. Cool and smooth, it adds to the satisfaction of the meal. 👍 A comfortable space and attentive service The Japanese-style interior was calm, allowing us to enjoy a leisurely meal. Even though it was full and close to their break time, the attentive service made our visit comfortable. A recommended restaurant that makes you want to return!

More than 30 years ago, around when it opened, the president of the company I worked for liked this restaurant and often brought me here. After changing companies, I had no opportunity to return, and so many years passed. This time I finally had a chance to visit again, and the flavor was as delicious as ever. It is a joy to eat good soba without going into central Tokyo or to Nagano. They have seiro and arabiki soba, and personally I think I prefer the arabiki. Bamboo shoot tempura was available as a seasonal dish, so I ordered that too, and it was delicious. The bamboo shoots' sweetness really came through. The sobayu after the meal was delicious too. After finishing, we received a complimentary dessert. The soba tea jelly, with its subtle soba flavor and sweet kuromitsu, was a very nice palate cleanser after the soba. I remember the entrance used to be low like a tea ceremony room, making you bend down as if bowing, and I think there was tatami seating. But that was more than 30 years ago, so they have probably remodeled.
