I had the chicken paitan ramen. The rich chicken paitan soup, where the umami of the chicken is clearly conveyed from the first bite, was not the type that relies only on viscosity, but the density extracted carefully was impressive. While the mouthfeel is creamy, the aftertaste is gentle, and the thickness of the chicken oil and the saltiness design are well-balanced, so it doesn't feel heavy even as you keep drinking. The medium-thick straight noodles lift the soup well, and every time you slurp, the richness enters together. The moist chicken chashu, the menma with suppressed sweetness, and the chopped green onions that add aroma were also a composition that does not break the flow of the whole. Visiting at 13:30 on a holiday, it was full and the waiting continued, but the impression of the waiting time is reduced by the counter where you can see the cooking process and the calm behavior. Greetings and serving were also consistently polite, and it was a stable operation without feeling hurried. It is a bowl that balances the satisfaction of richness and the comfort after eating, and more than the awards received, the point that the direction of making is not shaken remained strongly in my memory.
View on GoogleChicken Paitan Shoyu Ramen Rich chicken paitan. I feel the dedication in one bowl from the chef's careful plating. Since the saltiness is not strong (it doesn't mean it's tasteless), you can fully enjoy the dashi flavor. Add powdered cheese as a topping to increase the richness. After ordering kaedama and mixing it with seasonings to my liking, I ate it all up in an instant. Thank you for the meal → Thank you very much!! I want to visit again to eat delicious chicken paitan and hear the warm greetings from the chef and his wife.
View on GoogleIt seems that the post from when the shop was temporarily closed has disappeared, so I commented again. Renge-san, I'm happy you reopened. I usually only have the tanrei shoyu ramen, but I tried tsukemen for the first time. The tsukemen soup is chicken paitan based, which is usually thick and not my preference, but in the case of tsukemen, I was able to eat it quite easily, and I enjoyed it very much. The master and his wife are still providing polite service and it shows that they are really making ramen with their lives. I want them to keep doing their best. I am rooting for you.
View on GoogleThe rich chicken paitan ramen was delicious. And what was most wonderful was not only the taste but also the hospitality of the service. Attention, care, and consideration, all of which were thoroughly implemented at a very high level, and I was impressed. It's a pity that the business days are irregular, but I would like to visit again while checking the posts on X.
View on Google[Notes on use] ・Please check the official X (formerly Twitter) for regular holidays and business hours before going ・Because the owner makes it carefully, it takes time I visited for lunch. This is my first visit in 7 years since the ramen service resumed. The characteristic of Renge-san is the soup soaked with chicken extract, the umami of chicken feet, etc., collagen dissolved, and a taste that is addictive. The noodles are also straight and don't lose to the soup, and the balance of lifting is good. The point worth mentioning is the chicken chashu with exquisite saltiness and texture. Tsukemen has not resumed yet, but I would like to go eat other menus when I have the chance. Thank you for the meal. ○ Small info ・5 minutes walk from JR Hachioji Station South Exit ・Payment is cash only in advance ・If there is a line, buy a meal ticket after entering the store
