麺工房 やまん家 八王子店Men Kobo Yaman Ie Hachioji Mise
Loved by the local community, we have now entered our 5th year since opening. Our dedication to noodles and broth has led us to use 3 types of noodles. We have been able to offer exquisite flavors through the perfect three-way harmony of each noodle, broth, and topping combination. Clear fat floats on the soy sauce broth, and the straight, medium-thin noodles go very well with the relatively light soup. We also have an extensive selection of snacks to accompany drinks. Why not come and visit us?

This shop near the rotary outside Hachioji Station's south exit serves not only Hachioji ramen but also shio tanmen, tonkotsu, miso, abura soba, tsukemen, and even creative options such as tomato noodles and miso curry. I had assumed the flavors would be bold and assertive… But I was surprised by how incredibly gentle the seasoning was. I ordered Hachioji wonton men with a chashu topping and the complimentary large portion. A sip of the broth brought the aroma of dried sardines, with not that much lard and onion that was almost grated! It was not overly salty and tasted so good I wanted to finish all the broth. There were also 2 types of chashu, belly and loin, and I found the loin especially delicious. When chewing it, I thought the meat's savory flavor and the sauce's sweetness were nicely balanced. Apparently you can also have alcoholic drinks here, so I think it would be excellent for ramen to finish off the evening. They said that because of coronavirus, they would close at 20時 if a request to shorten business hours was issued… I hope we can freely eat and drink again soon. Next time I will come earlier. Keep it up!
View on GoogleI happened to drop into this shop. The soup contains dashi powder and tastes good, but the noodles seem to be a low-calorie type, which left me feeling “hmm…” They might suit female office workers and the like, but when eating delicious ramen, you really have to accept the calories…
View on GoogleYou can also switch to off-men with 25% fewer carbs‼️ So considerate that there is no extra charge😭😂 Many nearby ramen shops serve rich, heavy ramen, but this one is on the lighter side😊
View on GoogleA ramen shop at Hachioji Station's south exit where you can also stop for a quick drink. I ordered Hachioji abura soba ¥620. A large portion (300g) is free. Since the dish has Hachioji in its name, it comes topped with chopped onion as usual. Put chopped onion on anything and it becomes Hachioji something. The noodles are thick and springy, with a very chewy texture. The sauce is soy-based and quite strongly flavored. Mix thoroughly, lifting the sauce up from the bottom. Enjoy the original flavor at first, then add vinegar partway through to change it up. The sauce combines with the vinegar and emulsifies. Its sharp edges disappear and the flavor becomes mellow. A large portion of thick noodles is quite substantial and satisfying. However, nothing else particularly stands out, and overall it feels fairly safe. Not bad, I would say.
View on GoogleI ordered shio tanmen 700円 + a free large portion. Frankly, it was not very tasty. It was salty ramen topped with pieces from near the cabbage core.
