Is a handmade soba restaurant at the foot of Mount Jinba, celebrating 90 years since its founding. Our signature is 100% buckwheat soba made using our unique “kikouchi” technique. With our “made-on-the-spot” approach, we start making the noodles with each order, letting you enjoy the aroma and texture of freshly made, freshly cut, and freshly boiled soba. Everything is gluten-free, and vegan options are also available. Surrounded by two clear streams and nature, the location is also popular as a destination for drives, motorcycle tours, and hikes. We also offer local flavors such as venison dishes and homemade amazake. We offer a day where “coming here is a journey in itself.” (100% Buckwheat Nood…

Having spent over 5 hours hiking Mt Takao, Jinba and others, this was a welcome and refreshing stop. Thankfully, the bus runs every hour so I had time to enjoy a tasty meal of soba and tempura. Sitting outside beside a stream with a bamboo forest in front of me was spiritually refreshing (I am not in that kind of thing usually) and the food was physically refreshing. Normally, I enjoy tempura with a bit of sauce but this was incredible on its own. The waiter suggested trying it with lime juice and salt, and 'oh man' it was excellent. The fresh and bitey soba was accompanied by 4 bowls for dipping in. The walnut was a unique flavor for me. Unless I walk that hike again, I'll probably never come back here but I'll always remember the perfect end to an amazing hike.

A friend drove me about ten minutes from central Hachioji to an unbelievably rural area I had once thought impossible in the Tokyo megalopolis of wall-to-wall people. Our destination was the Jinba soba noodle shop which, according to my friend, had recently been featured on a TV talk show. We had arrived a bit early, so we crossed over a gurgling stream and found a shady area to chat and enjoy the cool, refreshing breeze while we waited. After only about fifteen minutes, the owner invited us to the main building where he served us cold soba noodles topped with sautéed seasonal mountain greens. The soba was delicious and fitting for a warm afternoon. I scarfed down the meal before I realized I hadn't gotten a photo to post. Oh well, at least now I have an excuse for another visit.
