It was the worst ramen I've ever eaten. I tried my best to chew the noodles, but I couldn't stand the unpleasant feeling of the limp noodles in my mouth, and after about three bites I couldn't eat any more. It was a first for me and a shock. The soup also tasted like something I'd had somewhere before, and there was nothing particularly noteworthy about it. It wasn't in a way that was good or bad, but the noodles were soggy and not very tasty, and the overall flavor balance was off. I also felt the price range didn't match the quality. The overbearing manager was often yelling at the staff, and it wasn't a very enjoyable atmosphere. I'll never go there again.

View on GoogleA really great bowl for when you want rich, niboshi-style chuka soba in Hachioji. Chuka Soba to Mori Chuka Hachioji Soan is a ramen shop about a 5-minute walk from the north exit of JR Hachioji Station. I visited around 21:00 on a Saturday night; there was only 1 other customer, and I got in without waiting. This time I ordered the "Ajitama Chuka Soba" for 1,150 yen. They had ramen and tsukemen, but I went with the chuka soba. The soup has a solid umami from niboshi and pork, leaning a little toward niboshi. It's rich but not too heavy, with an addictive quality that keeps you sipping. The noodles are thick and curly and cling nicely to the soup. The chashu was tender and well soaked in the soup—very much to my liking. The ajitama and menma were also well seasoned, and overall it's a very satisfying bowl. Inside is counter seating only, and it's easy to go in even alone. The ink-wash-painting-style design on the walls and ceiling is striking too; for a ramen shop it had a slightly upscale feel and was relaxing. The staff's service was pleasant, and you can tell they're good people. Payment is by ticket machine and cash only, so cashless folks should watch out for that. Near Hachioji Station, it's a great pick when you want rich chuka soba or niboshi ramen. Next time I want to come back for the mori chuka.
View on GoogleI tried the mori chuka with extra meat. Plus aedama. The combination of the two was pretty good. The chashu is on the fatty side, but it pairs outstandingly with the soup's punchy chicken-bone and animal-based flavor The noodles are curly with a chewy texture Well balanced and delicious It was really satisfying! The gooey ajitama goes well with it too Price is about 1200 yen ➕ aedama, rice, or a rice bowl.
View on GoogleI was in Hachioji, so I went to a shop I'd been curious about. Went in and bought a meal ticket. I chose the chuka soba. It's 990 yen. It was right around opening time, so there were no other customers. The service was very polite. After a while, the bowl arrived. A simple chuka soba. But delicious. It was the kind of taste that makes you think, "This is exactly what I want." Thank you for the meal.
