Really delicious bowl of noodles. I wanted more as soon as I finished eating.

If you want a rich bowl after drinking in 八王子, this is the place. 味の天徳 八王子店 is an abura soba shop about a 5-minute walk from the north exit of JR八王子 Station. I visited around 5 on Sunday morning on my way home after drinking all night. Since it's open 24 hours, it's great to have somewhere to go after drinking around 八王子 Station or when you want a substantial meal late at night or at dawn. This time I ordered 「おすすめ油そば」 for 1,050円 (tax included). The noodles are the chewy type typical of abura soba, and the sauce with its strong tonkotsu flavor was just the right richness after drinking. The table also has vinegar, chili oil, garlic, and other seasonings for changing the flavor, so it was nice to adjust it to my taste as I ate. Despite the early hour, there were about 3 groups inside, showing the demand for 24-hour service. It has the cleanliness and consistency you'd expect from a chain, with an atmosphere that's welcoming for solo diners. The portion and price are well balanced, though big eaters might find it a little lacking. Cash-only payment was a slight disappointment. I'd recommend it to: ・People wanting abura soba to finish off a night drinking around 八王子 Station ・People looking for a ramen or abura soba shop open late at night or at dawn ・People wanting a quick, rich bowl on their own It's convenient as a place to eat abura soba 24 hours a day at the north exit of 八王子 Station, so I'd like to stop in again after drinking.

『味の天徳/八王子店』 is about a 3-minute walk straight along ユーロード from the north exit of 八王子 Station. It's an abura soba specialist whose main shop is in 相模原. This 八王子 branch in particular is open 24 hours, something rare these days! Late at night or early in the morning, even when other restaurants close between services, you're always welcome. Such an incredibly appreciated place🙏 Inside, there are 18 counter seats + 3 tables seating 4. It's larger than you'd imagine from outside, and the seats aren't that tightly spaced, so you can relax. This time I ordered 『豚骨油そば』. They have soy sauce, salt, and tonkotsu, but this tonkotsu packs the biggest punch! The sauce is creamy, while the richness of the tonkotsu coats the noodles directly. Unlike ramen, it's sauce rather than soup, so the tonkotsu concentration is outrageous, haha. That makes it irresistible for tonkotsu lovers( º﹃º )drool. But the sweetness of the back fat mellows it, so there's hardly any unpleasant flavor. The old-fashioned naruto is nostalgic too♪ The noodles are homemade, thick, and straight! Being straight, they take the sauce and oil evenly, with fewer uneven patches. With slightly low hydration, they have a springy, chewy texture and a firm bite, and feel quite substantial when mixed with the sauce! Rather than the jiggly texture of tsukemen noodles, these prioritize chewiness and satisfying heft. The chashu actually reflects the "personality of the shop" well too. It isn't a star attraction that's "incredibly thick" or "so tender it falls apart just from being picked up with chopsticks". But it's moist and tender, not extra thick but thick enough. It pairs well with the sauce and doesn't disrupt the overall balance, making it a fully realized ingredient as part of the abura soba. And the most fun part of this place is being able to add toppings however you like! Besides the standard toppings like chashu and menma, the ticket machine sells all sorts of additions, including back fat, nori, soft-cooked eggs, mayonnaise, and more. Of course, ordering extras while you're eating is fine too. (A meal ticket is required) The tables also have chili oil, vinegar, garlic, soy sauce seasoning (for adding), and pepper. Abura soba designed for customization, haha. There's absolutely no pressure like "eat our ramen this way"; the shop actively encourages customization! Each customer develops the flavor to their own taste. My personal recommendation is to eat about half, then pour in lots of vinegar and garlic, haha. Easy to access and open 24 hours, it's an extremely convenient place. The customizable abura soba is appealing, and it's astonishingly affordable Σ(・ω・ノ)ノ! Amid these rising prices, you can eat abura soba at an unbelievable price. It's perfect not just for lunch or dinner, but also for an indulgently sinful bowl after drinking(^_^)/~~~

Before I knew it, I had passed through this noren again late at night in 八王子. Here at 『味の天徳』, the human instinct of appetite is stimulated in the most direct, and most violent, way. In recent years, the 八王子 area has become a fierce battleground, with new abura soba specialists springing up one after another. Many newcomers focus on marketing and appearance (so-called social media appeal). But for those with a palate that seeks "authenticity" and refuses to be swept along by informational noise, this is where they ultimately arrive. An unadorned exterior blending into the bustle around the station, and rugged counter seating. There sits an absolute confidence in flavor, indifferent to superficial review-site scores. This time I ordered the classic 「醤油」. The rich aroma of soy sauce and oil rises the instant the bowl arrives. As though an antithesis to today's overly complicated ramen scene, the composition is extremely simple. Yet within this bowl exists a "perfect golden ratio" meticulously calculated over many years. The heritage soy sauce seasoning and fat cling thickly to the specially made chewy noodles. One slurp brings a vivid umami as though the brain's reward system has been directly hacked, mingled with the guilty indulgence of eating late at night, and you can't stop your chopsticks. Deliciousness that faces you head-on, without gimmicks or escape routes. This truly is both the "legacy" and the "supreme pinnacle" of 八王子 abura soba. I don't deny the pleasure of exploring new shops. But here is the formidable power of the "real thing" that survives without being eliminated in this city of rapidly shifting trends. If you want to taste the pure essence of abura soba without being misled by fabricated reviews or trends, please visit late at night. If you connect with this supremely guilty experience, please leave a reaction.
