Our restaurant is a casual French restaurant operated directly by the long-established ham manufacturer 『大多摩ハム』. We always offer a wide selection centered on 10 craft beers, along with wine, sours, and cocktails. We provide drinks that pair perfectly with dishes made using ham and sausages delivered directly from the adjacent 「大多摩ハム」 factory. Enjoy a special moment with approachable casual French cuisine that is a little more refined. A 大多摩ハム factory shop is also attached. ================== The listed opening hours are the restaurant's hours, and the closing time is the final closing time. The Ultimate "Farm-to-Table" for Pork Lovers The most important thing to know about Stuben Ohtama is that it’s the flagship restaurant for Ohtama Ham, the local ham factory right behind the building. They are the pioneers of Tokyo X - a rare designer breed often called the "Kobe Beef of Pork." What makes it special is the hybrid of three specific breeds chosen for their best traits: - Beijing Black: For rich flavor and fat quality. - English Berkshire: For fine texture and muscle quality. - Duroc: For its incredible marbling (fat woven through the meat). Because you are eating at the source, the quality here is far beyond a standard restaurant. Popular Dishes: Stewed Beans and Bacon: Bacon smoked in-house at the factory. It comes thick-cut and grilled so that you can see why Tokyo X fat is famous - it literally melts in your mouth (designed to melt at human body temperature). Tokyo X Shoulder Roast: If you want to taste the meat with less "fuss," this is the move. It’s grilled slowly to order to lock in the juices and served with a tangy French pickle and mustard sauce that cuts through the richness. Tokyo X Pork & Bacon Simmered Stew: Their signature dish. The white wine and onion base is slow-cooked until the meat falls apart like spreadable butter. The Fussa Dog: This is a local cultural icon in the town of Fussa. To be an official "Fussa Dog," the sausage must be 16cm long (for the town's famous Route 16) and 23mm wide (a pun on "Fu-sa" / 2-3) and come from one of the town's two ham factories (Ohtama Ham and Fussa Ham). Since Stuben is owned by Ohtama Ham, you are getting the sausage at the source! Their version is topped with their famous Tokyo X bacon - it’s the ultimate way to eat local history. Stuben also offers craft beer from Ishikawa Brewery (which is just down the road) to pair with your food. If you’re visiting in winter, don’t miss the Glühwein - it’s the perfect, warming accompaniment to the smoky meats. After your meal, take a stroll down the adjacent Route 16. Because it borders Yokota Air Base, this area is a 1950s Americana time capsule. The low-slung bungalows that once housed U.S. military personnel are now retro diners, vintage clothing shops, and quirky boutiques that feel totally different from central Tokyo. Bottom line: If you want to experience Fussa’s "Phantom Pork" at its absolute freshest or the Americana history of the Fussa Dog, this is the most authentic stop in the city!
View on GoogleThis was a wonderful place to eat lunch and the ambiance was very reminiscent of Germany! Great tasting sausages, the breads and pretzels were soft and warm, and they had a good selection of beers and wines. If you're in the area and looking for something different to eat, I highly recommend this place. It's a little piece of Deutschland in Japan!
View on GoogleNov. 24. 2024 Went back today and the food was good. The pork was tender and tasty. I had the lunch set for ¥2500 and Madam Wife went with the ham and bacon deep fried dish. Adding soup and salad brought her meal up to ¥1310. If you’re in Fussa give it a try. If you like ham and different sausages this is the place for you. A limited menu, but adequate. Seating upstairs in a large enough space that tables are not jammed together. The deli counter on the first floor offers packaged meats, but don’t think of it like an American or European deli where they slice the meat and you can buy an ounce or a kilo. Here, it’s all packaged for take away. Service is quick and portions are fine. Price is very reasonable. Free parking and the restaurant is non-smoking. Now, if they could just get some decent speakers in that upstairs dining area rather than those very tinny sounding ones they have.....
View on GoogleStopped in after a day trip to the air base. Ordered the craft Pale ale, bruschetta and Bolognese pasta. Everything was good and decently priced. Service was amazing and fairly quick. Would come back if I lived in the area.
