I've lived in Fuchu for 25 years. After being curious for so long but never quite finding the chance to visit, I finally stepped through the entrance curtain at 「竜の鮨」. To give the conclusion first, it was a wonderful evening filled with regret at “Why didn't I come sooner?” and an even greater sense of admiration. ■ Appreciating the chef's finely honed skill Every piece of sushi and every plate had an extraordinary persuasiveness. When I asked, the chef said he had trained at various renowned restaurants. That wealth of experience is distilled into the temperature of the sushi rice, the curing of the toppings, and the timing of every serving. What surprised me most was the rolled omelet served at the end. Its finish seemed to say, this is a craftsman's skill. The fine texture and the balance of gradually unfolding stock flavor and sweetness are surely a level that can only be reached through years of practice. Just one bite of this omelet convinced me all over again of the exceptional completeness of the entire course I had enjoyed that day. ■ Stunning small dishes and red-vinegar nigiri • Sashimi: Seasonal アイナメ and succulent トリガイ. The knife work was superb, bringing out the ingredients' appeal without compromising them. • Seasonal specialties: A small bowl pairing ノレソレ with 桜エビ, and fried 太刀魚(タチウオ), with rich fat flowing from its crisp coating. The cooking technique was first-rate too. • Ultimate indulgence in a small bowl: Crab rice topped further with salmon roe and sea urchin. The moment everything melded together in my mouth was pure bliss. ■ The renowned sake 「59高千代」 and an impressive collection The sake lineup elevated the food even further. The 「59高千代」 I had this time had a wonderful rich aroma and clean finish, perfectly complementing that day's dishes. At the end, the chef showed me the many bottles of 「鍋島」 and 「田酒」 he is proud of. The depth of the collection also conveyed his extraordinary passion for sake and food. ■ Overall assessment Sushi rice with pronounced red vinegar, toppings showcasing craftsmanship, and rare local sake to complement them. To make up for the 25 years I overlooked this local gem, I intend to visit frequently from now on. I'm grateful to have encountered such stylish, sincere Edomae sushi here in Fuchu. Chef, thank you so much for a truly wonderful time. Thank you for the meal.

I stopped by after the Oaks, and our reservation filled the last available seats. Even though the chef handled the cooking alone, the dishes arrived smoothly without keeping us waiting, and they were very delicious and delicate. I'll stop by again when I visit Tokyo Racecourse.

On my first visit, I had the 8,000円 course. Every piece of sushi showed skill, and the deliciousness and satisfaction exceeded the price. It was so delicious that the following week, my wife and I ordered the 12,000円 course. They served sushi with different toppings from the previous visit, and the hospitality and consideration conveyed the chef's warmth. When we spoke, he said he'd worked as a sushi chef in an area serving ultra-luxury sushi, which explained the delicious sushi, thoughtful service, and hospitality. It was just as impressive as you'd expect. I think being able to eat sushi of this caliber at this price in this area is excellent value. They also said they accommodate families with children thoughtfully, so I'd like to bring the children next time. The comments from before the renovation suggested a focus on profit, so I was a little hesitant to enter at first. But the new chef offers good food at good prices, so I plan to keep visiting regularly.

Seriously, there's so much food—you find yourself thinking, they're bringing out this much? Every item is excellent. Turns out Fuchu has delicious sushi too. Shouldn't this place be a little busier?
