It's along the Kyu-Koshu Kaido, between Fuchu and Higashi-Fuchu. I visited after parking in a nearby paid parking lot. A long-established neighborhood Chinese restaurant, a small place with only 7.8 counter seats, run by an elderly couple. Despite being some distance from the station, customers keep coming. I ordered tanmen for 950円 and gyoza for 550円. My companion had chashu men for 1000円. Apparently it comes in salt and soy sauce flavors, and they ordered the salt version made with Mongolian rock salt. The tanmen only comes in salt flavor. The gently flavored, stock-rich soup pairs well with the very thin, high-hydration noodles. The vegetables include Chinese cabbage, carrots, wood ear mushrooms, and bamboo shoots. My companion gave me a slice of chashu; it was moist and fairly salty. Each gyoza was large, generously filled, and not heavy. Someone next to us was eating mapo tofu, which looked authentic and delicious. I'd like to try dishes other than ramen too. Cash payments only.

On Sundays they open at 11時30分, and there were 4 people waiting, including us. The first round of seating was full about 15 minutes after opening. Food is served quickly, and the place seems to turn tables efficiently. The shio ramen soup uses Mongolian rock salt, which seems to be a point of pride. Many people were ordering shoyu ramen too, and whichever soup you choose is delicious. With regular ramen still in the 700円 range these days, I think it's great value. The fried rice and gyoza are delicious too, and takeout is available.

While looking for a ramen shop nearby, I found this place, Apparently the shio ramen is recommended, I chose negi chashu men and fried rice, The ramen arrived first, and I dug right in—delicious (゚д゚)ウマー, The shio ramen recommendation makes sense: a light flavor with a pleasant finish, The chashu is also the old-fashioned dry type, with just the right saltiness emerging the more you chew—delicious (゚д゚)ウマー, With my expectations raised, the fried rice arrived, I took a mouthful………………………, Salty, with rice that was far too soft—moist in a different sense, That definitely lost points for me, I somehow finished the fried rice, So is shio ramen or pan-fried gyoza the thing to get here after all? Lots of people order gyoza, Maybe I'll try the gyoza next time? Give it a try at least once (*´ω`*)

It's far from the station and the shop is retro—the location has nothing but negative factors, but the taste is second to none. I've only had the shio ramen and gyoza here, but both are delicious. There are only 8 seats, though, so I'd appreciate it if customers didn't take up seats with their bags when it's busy. (Update 2020/8) Apparently they're not doing hiyashi chuka this year. I tried the tanmen this time. Compared with the shio ramen, the tanmen seems to have the vegetables' sweetness in the soup. I also tried the yakisoba (special stir-fried yakisoba) on another day. This is Japanese-style yakisoba with a soy sauce flavor. The seasoning is a little salty. It's like Shanghai yakisoba, but the flavor is 100% Japanese soy sauce.

The best shoyu ramen. Soup you can drink to the last drop, firm chashu, and the crunch of wood ear mushrooms. Ramen that elevates the old-fashioned style. The gyoza are chewy with plenty of vegetable texture. A counter-seating-only shop frequented by many regulars.
