Ajitama Se-abura Chuka 1100 yen + condiment green onions 100 yen + wood ear mushrooms 100 yen First visit. Arrived at 11:12 on a Saturday in March 2026 and joined a line of 7 people inside and outside. There was a notice to buy meal tickets first, so I bought one at the ticket machine to the left of the entrance and went back to the line. The tickets were collected partway through, and like at an iekei shop they asked for my preferences; I asked for everything regular. A three-person operation, but turnover was on the slow side; at 11:30 I was guided in to wait inside, seated at 11:36, bowl arrived at 11:43. Backfat is sprinkled over the surface and the portion is generous. The soup is a clear broth, an animal-based stock mainly from pork bones, with a light soy sauce tare. There's sweetness from the backfat, reminiscent of Hope-ken, but the umami and richness fall a bit short, and it being somewhat lukewarm was also a shame. The noodles are medium-thick with a square cross-section. Slippery and on the soft side. Not much flavor to them. The portion is large, maybe around 180g before boiling. The chashu is pork thigh, two thick, large slices. Not simmered much, the type that lets the meat's own flavor carry it. Tasty, but quite tough and hard to bite through. The ajitama has a jelly-like yolk and is well soaked in salt tare. The spinach is limp but fresh. About 10 pieces of menma, soft with mild seasoning. Quite a lot of finely chopped green onion. The wood ear mushrooms are about 8 whole pieces, good value. Overall it's reasonably tasty, but the impression is quantity over quality. Everyone was ordering toppings and sides; seems like many people are aiming to stuff themselves. Service is good, including how they manage the line. When I left at 11:55 there were about 12 people waiting.

Family of four; we parked at a coin parking lot around the back nearby and waited in line for about 40 minutes. I ordered the large Ajitama Chashu-men and rice, and when I shared my ajitama with my wife next to me, the owner, who saw it right in front of us, warmly said, 'How kind of you,' and I thought, it's you whose kindness really shines through. The noodles, soup, and chashu are all top-class, so I recommend it!

Visited on Sunday around 10:50 before opening. Two people were already lined up. At 11 we got in right away. Ordered the ajitama chuka soba, noodles firm, oil regular. After a while, the ramen arrived. The noodles are medium-thick and straight. Slippery texture. The soup has a crisp soy sauce flavor like Ura Musashiya with backfat in it, and feels lighter than it looks. Solidly tasty. Generous portion too, which is nice. Next time I could probably handle extra oil. The noodle portion is large even by default, so I'd recommend middle-aged and older folks order regular. Also, the chashu is infused with saltiness and has a bite that's neither soft nor hard. It's not melt-in-your-mouth chashu, but it's tasty. The ajitama is gooey and the seasoning is just right. Almost perfect, except the noodles felt soft for 'firm.' I can recommend it. Depending on the time there seems to be a line, so it might be good to go off-peak. No parking, but there are various coin parking lots nearby. Thanks for the meal.

July 2026, weekday visit at 19:11 5 people waiting 19:39 bowl arrived Chashu Backfat Shoyu 1,250 yen Kaiware 50 yen A popular backfat ramen shop. That day, even though it was a weekday evening, there were 5 people waiting, and it was bustling mainly with locals. The air conditioning inside was barely working, so it's pretty hot in summer. It was a bit of a tough environment for eating piping-hot ramen, but the fact that people still line up shows how popular it is. The soup is chatcha style, with plenty of backfat floating on it. But when you taste it, the flavor is surprisingly gentle. The noodles are chewy and medium-thick, a great match with the backfat-coated soup. These homemade noodles were really good! They pick up the hot soup well, and you can really taste the wheat. The kaiware I added gives a refreshing spicy accent, recommended. The chashu is very satisfying, generously filling the bowl. Moist and tender, with the meat's flavor coming through well. I thought 1,250 yen for this volume was very reasonable. Not a flashy impact, but a bowl whose appeal is a balance that makes you want to eat it again and again. A shop I can recommend even to people trying backfat chatcha style for the first time. Once the AC is fixed, it'll be even more comfortable to enjoy. —— Thanks for the meal. To eat is to live.

The homemade noodles were slippery and chewy, the sprinkled backfat (se-abura chatcha) gave sweetness and richness, and the soft, large chashu was really delicious◎ It should be heavy with all that volume and fat, yet the balance was very clean — a ramen I'd want to eat every day! I also had the negi-chashu on a separate plate. The spiciness is just right, and it seems like it'd go great with beer◎ There's also chashu to take home. There are about 3 coin parking lots behind the shop, so please use those. Thanks for the meal! I'll definitely be back☆
