Nihonbashi Ramen Toki
"Nihonbashi Toki (朱鷺)" is a small ramen shop with just 8 seats, a 1-minute walk from Kodemmacho Station on the Tokyo Metro Hibiya Line. Since opening in 2023, it has been loved by locals and overseas travelers. Its signatures are a clear soup carefully simmered from niboshi (dried sardines), chicken, and pork, and shio and shoyu ramen that bring out the flavors of the ingredients. There are 2 toppings: pork belly chashu whose flavor is deepened with aromatic vegetables and fruit, and shrimp wontons fragrant with green shiso. The atmosphere is casual: quick at lunch, relaxed in the evening. Its location makes it easy to drop by between sightseeing or business, and you can enjoy a simple yet carefully finished bowl. Went here for lunch and dinner on my last trip to japan. The shoyu ramen was really nice. The meat was tender and the wanton was great. This is quite popular place among uma fans, so I decided to visit. The chef is very friendly and loved the chit chat there after i finish my meal. there was a lot of uma musume merchandise and also they play lots of uma songs (together with other classic banger old anime songs) Recommended esp if you're into uma musume. (even if you're not, the ramen still very nice anyway)
View on GoogleOne of the great accomplishments in cooking is to get opposites to work together. Toki's salt broth ramen (the first option on his menu) manages to be both delicate and robust at the same time. The broth delivers an astonishing umami punch while giving the impression of lightness, openness, and ease. This is seriously good food. Service is warm, open-hearted, and incredibly welcoming. The politeness the Japanese are renowned for suffused with real care and attention. Toki is a true host: attentive, but never intrusive. Using the touchscreen kiosk at the entrance to order is easy and painless. Cash and cards accepted. Atmosphere is laid back, inviting, and cheerful. Decor is thoughtfully kitsch. The place feels very human, like it belongs to a real person who wants to welcome other real people. Worth going out of your way for. Highly, highly recommended.
View on GoogleThe chef here is very cool and his shio ramen is great. Nice light broth, tasty wontons, nice firm thin noodles. Good stuff. It's a little on the higher end for price with the basic bowl being ¥1500. I enjoyed it though and I enjoyed the vibe even more.
View on GoogleI usually find shoyu ramen a bit on the heavier side, but this shop's shoyu ramen was light & delicious. The noodles were a perfect consistency and the portion was reasonably sized for the price. The chef was also very accommodating & friendly! Great find in the Nihonbashi area. The store is a bit small though and can only hold 4-5 people at a time.
View on GoogleThe ramen here was one of the best ramens i’ve ever tasted! The chef was also super nice:) You can see the chef making the ramen in front of you. It was also a lot of local people here, indicating a very popular local ramen place. Would strongly recommend if you want an authentic ramen experience!!
