Rich broth with 2 types of noodles & raw egg rice served in an informal space with counter seats.

A 3-minute walk from 神保町 Station. This is 「つけそば神田勝本」, a tsukemen specialty restaurant created by chef 松村康史, known for the Michelin Guide-listed 「銀座 八五」. It was selected among Tabelog's hundred best restaurants 4 times: 2025,2024年,2022年,2021年. The tsukemen at つけそば神田勝本 is served with a combination of chewy thin noodles and smooth flat noodles. 「清湯つけそば」 features a rich broth, with aroma and umami carefully extracted from dried sardines sourced from 九十九島 in Nagasaki Prefecture. Enjoy a bowl filled with our dedication in a Japanese-style space reminiscent of a long-established soba restaurant.

It was actually my first time trying soba-style tsukemen, and honestly, I wasn't sure what to expect since I’m used to the super thick, heavy ramen broths. This was totally different in the best way. The broth is clear and refined, not oily at all, with a really nice hit of yuzu and dried sardines (niboshi). The coolest part is that they serve two types of noodles in one bowl: one is thin and smooth like traditional soba, and the other is a thicker, flatter noodle. Super chill atmosphere inside too, very clean and peaceful. I didn’t have to wait as I got there when it’s almost closed.

I highly recommend this amazing tsukemen restaurant. They use two different types of ramen noodles. The different diameters really create a unique dipping ramen experience. If you order the deluxe bowl, you get chashu, pork belly and shrimp wontons. The pork belly was succulent. I added a dash of chili powder and vinegar for my broth. They have an English written menu to order at the kiosk. Note this place is cash only.

Phenomenal tsukemen here where they serve two different types of noodles in each order. One is white, thinner, and has a little less chew while the other is a thick, yellow, chewier noodle. Both are amazing. The fish and pork dipping broth is amazing and comes with chashu pork that’s been slightly charred with a torch before being served which adds an extra smoky depth to the meat and the broth. A must try for tsukemen lovers.

This restaurant is located around a university and it gets very busy around lunch time, even on a weekday. The lineup wasn’t too long as we waited around 30 mins, and lineups kept on going even after we got inside. You first order the dish you want on a machine; and if you can’t read Japanese, they have an English menu. The server who greeted us was very friendly and was helpful when we had questions. After ordering through the machine and getting the tickets, you can choose your seat and give the tickets to the chef. I highly recommend getting their signature dipping ramen. The food came fairly quickly and the chefs were very happy when they gave us our food. The dipping ramen comes in thick or thin noodles, but I think you could ask for just thin or thick (not sure since we couldnt read Japanese). The ramen noodles were made fresh and very chewy, and the broth was so flavorful, yet wasn’t too salty. Make sure to not pour the whole soup inside the noodle bowl, you’re supposed to dip the noodles a bit at a time in the broth. After finishing, the chef let me try the soup with a zist of lemon which was also very refreshing. I had a great experience and highly recommend visiting! The lineups are worth it :) IG: Ayenomz

Staff was great and kind. Restaurant looked nice. Noodles were greasy and mediocre, and the soup wasn't clear or full of seafood flavor (both advertised on the site)
