Naoji, the popular ramen shop originating in Niigata! A ramen shop where you can enjoy Jiro-style backfat chuka soba ◎ Its “Niigata ramen” is made with the original 『ど煮干しスープ』, a blend of seafood and dried sardines that pairs well with backfat. Just a 1-minute walk from Ochanomizu Station, so feel free to stop by for lunch!

The back fat is a pretty good match with the gentle taste of shoyu soup and diced onion. Noddle is very chewy. Good ramen shop!

I went to try Tsubame-Sanjo backfat ramen, one of Niigata's five major ramen styles. I arrived before 12 and could sit wherever I liked, but after 12, the 4 counter seats, 3 tables for 2, and the table for 4 at the back were all full❗️ The clear broth had a dried-sardine flavor, and the backfat wasn't too heavy. The onions floating in even greater quantities than the backfat were sweet and crunchy, and it was delicious❣️ The special thick noodles were firm and had a noticeable wheat flavor❗️ Very satisfying to eat‼️ The pork-belly chashu and menma were also delicious❣️ Next time I'll go try another kind of ramen❣️

Takana and backfat shoyu. 1,080 yen Lighter in flavor than I imagined. There isn't that much backfat; the takana is actually more prominent. The takana is spicy and tastes good. As for the ramen itself, I'd say it's ordinary. I haven't tried the other varieties, so I can't really say. If you imagine Kitakata ramen, I think you can get an idea of the taste.

Visited Naoji for the first time in a while. Among Tsubame-Sanjo-style ramen, I like how its saltiness feels just right. The special version with bara nori, chashu, egg, and onion is nice. The thick, curly noodles are satisfying, too.

【Niigata-born Naoji @ Ochanomizu】 This is from April last year. I visited as a second stop after some quiet drinks at a Japanese restaurant. Apparently, it serves Niigata Tsubame-Sanjo-style ramen. Looking it up afterward, I found it has quite a few branches in Tokyo, too. It is right by the station, but the shop was quite cramped. ————— ◆Backfat chuka soba + seasoned egg topping Since it was our second stop, I may have asked for fewer noodles. A bowl with plenty of backfat in a light dried-sardine broth without any harsh bitterness. I expected the backfat to make it rich and heavy, but although it had sweetness, perhaps thanks to the onions, it tasted lighter than expected. The noodles were thick, curly, and chewy, picking up the broth nicely. Overall, it was a bowl to my liking. Thank you for the meal~
