Dining at EST, a one-Michelin-starred restaurant, is a refined and carefully choreographed experience, led by Chef Guillaume Bracaval. One of the more engaging moments of the evening came when Chef Bracaval personally approached the table to prepare the fish course, a thoughtful gesture that added a sense of intimacy and craftsmanship to the meal. The restaurant excels in consideration and service. Dietary restrictions were handled with genuine care: no alcohol, no pork, and a commendable flexibility in adapting the experience, including the creation of well-balanced mocktails, a detail often overlooked in fine dining, yet handled seamlessly here. The beef steak stood out as the strongest dish of the night, well-executed, and enjoyable. Unfortunately, the remainder of the menu did not reach the same standard. The starters lacked depth and distinction, the desserts were underwhelming, and even the bread — a simple sourdough — felt entirely ordinary. A special thank-you to Max, our table attendant, whose warmth, attentiveness, and professionalism elevated the experience. While EST delivers the polish and service expected of a Michelin-starred establishment, the overall journey falls short of leaving a lasting impression. Overall rating: 3/10.

Teetering on 2 stars, this truly French restaurant with Japanese sourced ingredients is a step above. A wonderful view, attentive service that explains every component, and a truly French defined course resulted in an unforgettable experience that goes beyond good tastes. It's an experience you will remember. The wagyu in particular was paired with a sauce that elevated it to another level, the best wagyu I had in Japan. Est is worth another visit and another star.

Had the five course lunch which was outstanding. Every course was different and exciting. Great knowing where all the ingredients come from in Japan per a map provided by the restaurant. The Japanese Chardonnay was excellent. The staff was very engaging and friendly. They went out of their way to provide us with information where to purchase wine. The young men who provided the table service were great!!! One of our best meals while in Japan.

Very good Christmas lunch - Japanese French fusion. We came with our dog in the private room and they welcomed us warmly. We love to come back.
